Yes the wife is right. Try this.
Apple and Potato Cake
1 1/2 lb Floury potatoes
3 tsp Salt
2 oz Butter
4 tsp Self-raising flour
2 x Apples, peeled,cored,chopped
2 tsp Granulated sugar
3 tsp Softened butter
The potatoes must be hot and floury, but either eating apples or cooking apples can be used. (Best results with a cooking apple, though.) - Boil the peeled potatoes in well-salted water. Drain and cover with a cloth to
"dry in their steam". Sieve or rice into a warmed mixing bowl, and beat in the fat. Work in sufficient flour to make the dough manageable, adding salt to taste. Divide the dough in half and roll or pat into 2 rounds of equal size just over 1/2 inch thick. Place one round on the warmed bakestone and spread with the chopped apple. Cover with the other round of dough and pinch the edges together. - Bake on the bakestone over a moderate heat until brown underneath. Turn using the broadest spatula you have, or two spatulas and a friend. Cook the other side. Remove the cake to a hot serving dish. Carefully peel up one side of the top of the cake, spread the apples with the softened butter, and sprinkle them with sugar.
Fold that half down and do the same to the other side. Sprinkle sugar on top, and serve immediately, with thick cool cream.
Chocolate Potato Drop Cookies
1/2 cup vegetable shortening (4-oz)
1 cup packed brown sugar
1 lrg egg
1 tsp vanilla
2 sqr unsweetened chocolate, melt, ed and coo
1/2 cup unseasoned mashed potatoes (about 1, medium russet), c
1 1/2 cup all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
3/4 cup buttermilk
1 cup currants
Cream shortening and sugar in large bowl of electric mixer for 3 minutes or until light and fluffy. Beat in egg, vanilla, chocolate, and potatoes until well combined.
Whisk flour, salt, and baking soda in medium bowl until blended.
On low speed, blend in flour mixture and buttermilk alternately until smooth. Stir in currants.
Drop by rounded tablespoons onto greased baking sheet. Bake in preheated 400F. oven for 10 minutes or until cookies spring back when pressed with finger; don't overcook. Transfer to rack and cool before serving.

No never tried potatoes in a sweet dish, only sweet potatoes, but publish more recipes and I am sure some one would try them a least once.
Look at the humble carrot, now you can get carrot cake, yum.
One day there could be a potatoe cake, the list could be endless, who knows what could happen. There is potential out there some where.

Mrs Beetons Puddings and Desserts Revisited
Potato Pudding
225g (8oz) Mashed Potatoes
150ml (¼ pint) Milk
50g (2oz) Butter
50g (2oz) Sugar
2 Eggs
1 Small Lemon, juice and rind
3 tbsp Sherry
¼ saltspoon Salt
Boil enough potatoes to make 225g (8oz) when mashed.
Add the butter, eggs, milk, sherry, lemon juice and sugar.
Mince the lemon peel very finely and beat all the ingredients together well.
Put the pudding into a buttered pie dish.
Bake for rather more than 30 minutes.
To enrich it, add a few pounded almonds and increase the quantity of eggs and butter.
Time: 30 minutes, or rather longer.
Sufficient for 5 or 6 persons.
Seasonable at any time.

Yes there are, especially in Middle Europe, the former Austrian empire, there are dumplings made out of potato dough stuffed with prunes or apricots, there are apple turnovers made with potato dough, there is at least one recipe for a flan case, and in Northern Germany people love grated potato pancakes with sweet apple jam.

Yeah I remember when I was a kid eating Mashed Potato and Peanut butter Pinwheels but I don't know the recipe exactly you add powder sugar to the potatoes and make a sort of rollable dough spread with peanut butter roll and slice.

The missus is right! My mother makes a lovely potato pudding. It's not gooey and 'liquidy' like the typical chocolate and vanilla puddings we're used to; it's a lot harder---like a cake but softer... Believe me, it's very very delish!! :D

there are a lot of recipes that use potatoes usually in a batter or pastry. My favourite is potato pancakes (add unsalted, dry mashed potato to batter mixture) served with lightly stewed plums and cream. Delicious!

In poland they wrap prunes in mashed potato and sprinkle sugar on top - that would be a sweet (if disgusting) dish !

Sweet dark plums are wrapped in a potato dough, and boiled before rolling in sweetened toasted bread crumbs. My Austrian grandmother made these delicious dessert dumplings for us every fall. These take some time to make, but to me, they're well worth the effort.
