This is a pampered chef recipe... hope u like it... it's exactly what you were looking for with a different variation at the bottom too.

Baked Brie with Apples & Cranberries

½ cup chopped apple (½ medium)
¼ cup sliced natural almonds
¼ cup dried cranberries
1 Tbsp packed brown sugar
¼ tsp Pantry Korintje Cinnamon (you can use regular cinnamon)
1 Tbsp melted butter or margarine, melted
1 round (8 oz) Brie cheese (about 4inches in diameter)
Canapé French Bread (recipe follows), toasted

1.Preheat oven to 350ºF. Coarsely chop apple with Food Chopper. Combine apples, almonds, cranberries, brown sugar and cinnamon in Small Batter Bowl; mix gently. Stir in butter just until ingredients are moistened.
2.Cut Brie in half horizontally using Utility Knife. Place one half of Brie, rind side down on Small Bar Pan. Spoon half of the apple mixture onto bottom half of Brie, spreading evenly. Top with remaining half of Brie, rind side up. Spoon remaining apple mixture over top. Bake 12-15 minutes or until cheese is soft and just begins to melt. Serve with toasted Canapé French Bread, apple wedges or assorted crackers.

Variations,: Baked Brie with Pesto and Mushrooms: Using food chopper, chop 4 oz of mushrooms (1 cup) and ½ cup seasoned croutons. In small (8-in) Sauté pan, cook mushrooms in 2 tsp olive oil 2-3 minutes over medium high heat; add chopped croutons and ¼ cup prepared basil pesto; mix gently. Assemble and bake Brie as recipe directs. Garnish with red bell pepper strips.

Canapé French Bread
1 package (11 oz) refrigerated French bread dough

1.Preheat oven to 375ºF. Lightly spray inside of bread tube and lids with nonstick cooking spray. Place lid on bottom of bread tube; fill with dough. Place lid on top. Bake upright 50-60 minutes. Cool 10 minutes.
2.Remove bread from tube onto Cooling Rack. Cool completely. Cut bread into ¼ inch slices diagonally in half, if desired.
3.To toast bread slices, preheat oven to 350ºF. Arrange in single layer on flat baking stone. Bake 10-12 minutes or until lightly golden brown.

Yield 24 slices (1 loaf)

Not sure but try this one...just substitute the pears to cranberries

4 squares sheets filo dough


2 tablespoons butter, melted


8 ounces wheel Brie cheese


1/2 cup Apple Curry Chutney


apples, sliced


pears, sliced













PREHEAT oven to 375° F.

BRUSH each sheet of filo dough with butter, stacking them on top of each other on ungreased baking sheet. Center cheese on top of filo sheets; spread chutney over cheese. Gather filo up around cheese. Lightly press filo base against sides and top of brie so excess filo forms a kind of sunburst on top. Lightly brush outside with butter.

BAKE for 20 to 25 minutes or until golden brown. Pull top open with fork. Break apart filo. Use filo pieces, apples and pears for dipping.
