Depends on how you make the juice. I've got an Oscar Vital Max juicer which is marvellous. All juices are foamy, fruit or vegetable. Beetroot sweetens any juice. I like to juice carrot, apple, brocolli, beetroot and lime. It's full of nutrients and delicious. Try juicing golden delicious apples and pouring over crushed ice. It's much nicer than lemonade.

Pineapples contain a lot of enzymes, so I suspect there's a chemical reaction going on.

Perhaps dome of the pulp is exracted in the juice making process and this makes it foamy
