The term can refer to a couple of diferent meanings. He can be the principle person in charge of a hunting club or operation. A government employee who oversees animal populations (especially deer and rabbit) on land areas. Basically a term used to define head person associated with hunting/animal control.

A german schnapps also shares this name too. The bottle has a pic of a stag on the label.
