i think it's "Quiero ser una estrella famosa" because on the other one, the word "que" without an accent mark means "that" and i think "sea" is the imperfect form of the verb "ser" meaning "to be" and together, i don't think it really makes sense. The first one means exactly what you said: I want to be a famous star.

You must say
"quiero ser (una) estrella famosa."
When the subject of the two verbs are the sam eyou must use the infinitive. Often there are examples where you do the opposite in English----
*I* think *I* can do it ---->
Creo poder hacerlo.
"sea" is the subjuntivo. You use this in clauses where the the two subjects differ.
---> Quiero que seas famosa.
----> Ella quiere que hayas la tarea.
Entendido? (Understood?)

I want to be a famous star = Quiero ser una estrella famosa.
I want him/her to be a famous star = Quiero que (él) sea una estrella famosa.
You want me to be a famous star = Quieres que (yo) sea una estrella famosa.
OK? No?
See; "Quiero" (1st person) cannot match with "sea" as 1st person. Only if "sea" is 3rd person.
