not like the usual pumpkin pie or apple pie...know anything tasty and different?

Chocolate Peanut Butter Pecan Tart Recipe

16 oz. semisweet chocolate
1 pint heavy cream
4 T. unsalted butter
1/2 C. pecan pieces
1/2 C. peanut butter
1 graham cracker crumb pie shell (9-inch)

Chop chocolate into small pieces and place in a bowl.

In a large saucepan, bring cream and butter a boil. Pour boiling cream over chocolate and stir until smooth and all the chocolate is melted. Stir in the pecans and peanut butter.

Pour mixture into the pie shell, and refrigerate until set.

Serve with whipped cream or ice cream.

Makes 8 to 10 servings.


Cinnamon Rice Pudding

3 C. cooked medium grain rice
3 C. milk
1/2 C. sugar
1/4 C. butter
2 cinnamon sticks
1 t. vanilla extract
Ground cinnamon
Berries and whipped cream, optional

Combine rice, milk, sugar, butter, cinnamon sticks and vanilla in a 2-quart saucepan. Cook over medium heat until thick and creamy, 20 to 25 minutes, stirring frequently. Remove from heat; remove cinnamon sticks and top with whipped cream and fresh assorted berries, if desired. Sprinkle with ground cinnamon.

Yield: 6 servings


Tiramisu Parfaits

20 vanilla wafers, divided

1 container (8 ounces) whipped cream cheese spread

3 tablespoons powdered sugar

1/3 cup cold brewed coffee, divided

1/2 teaspoon vanilla

1 cup thawed frozen whipped topping

Reserve 4 wafers for garnish. Coarsely break remaining 16 wafers; set aside.

Beat cream cheese, sugar, 3 tablespoons of the coffee and vanilla in medium bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping.

Drizzle remaining coffee over wafer pieces in small bowl. Spoon 2 tablespoons of the cream cheese mixture into each of 4 dessert dishes; top with 1 to 2 tablespoons soaked wafer pieces. Repeat layers, ending with cream cheese mixture.

Refrigerate at least 1 hour. Top with reserved wafers just before serving.

Makes 4 servings, 1 parfait each.

Serve topped with a small dollop of additional thawed frozen whipped topping.

Pumpkin pie or pecan pie are probably the two most common desserts served on Thanksgiving Day, I would look up a recipe for pumpkin pie. If pumpkin is hard to find where you live, you can substitute cooked, mashed sweet potato/ yams, and you can even substitute cooked, mashed carrots, although sweet potatoes are closer to pumpkin in flavor. The recipe will probably call for pumpkin pie spice- here's how to make that: Mix up a jar of your own: * Mix 1/4 cup of cinnamon with 4 tsp of ground ginger, 2 tsp of nutmeg, 2 tsp allspice, 1 tsp freshly ground cloves. You can make an adequate pumpkin pie spice with just the cinnamon, ginger, and nutmeg. I like the added flavor of allspice and cloves, but in a pinch you can do without.

These cookies are delicious. Serve them warm with vanilla ice cream.


CRAISIN OATMEAL COOKIES

1 1/4 cups of butter or margarine
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt (optional)
1 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
2 cups Quaker Oats, quick or old fashioned, uncooked
1 six ounce package of dried cranberries


Heat oven to 370F. Beat together butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, salt and spices; add to butter mixture, mixing well. Stir in oats and craisins. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 – 11 minutes for a crisp cookie. Cool 1 minute on cookie sheet; remove to wire cooling rack. Store in tightly covered container.

Makes 4 1/2 dozen

Apple Betty

"Everyone always raves about this pie. You don't have to make pie crust! You can control the sweetness by the amount of streusel topping you use."
Original recipe yield: 8 servings

PREP TIME 30 Min

INGREDIENTS
4 cups thinly sliced apples
1/4 cup orange juice
3/4 cup all-purpose flour
1 cup white sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch salt
1/2 cup butter
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9 inch pie plate.
Mound sliced apples in the pie plate. Sprinkle with orange juice.
In a medium bowl, mix the flour, sugar, cinnamon, nutmeg, and salt. Cut in butter until the mixture resembles coarse crumbs. Scatter over the apples.
Bake in preheated oven for 45 minutes. Serve warm.

This is not a very different recipe but it is a VERY good one for cheese cake. Mix in bowl 1 big container of cool whip with 2 cream cheese about 1tbs of REAL vanilla and sugar to your liking. Split it into two gram cracker crusts top with cherries. And the best thing is it only costs about 5.00 to make and the whole family will love it i promise.

Trifle is a yummy dessert (in a large bowl line bottom with cake, jam roll is nice, then put fruit on top of that then jelly on top of the fruit then custard or cream or both if your feeling indulgent on the very top). Apple crumble is also good (mix together some rolled oats, coconut, brown sugar, wholemeal flour, butter and ground nutmeg. put on top of some diced bakers apples put in the oven for 20 Min's, serve topped with custard or ice- cream).

Harvey Wallbanger Crockpot Cake

The Galliano liqueur and orange juice give this Harvey Wallbanger Crockpot Cake a wonderful flavor.

INGREDIENTS:

* 1 package pound cake mix
* 3-1/2 ounce package instant vanilla or French vanilla pudding mix
* 1/2 cup salad oil
* 4 eggs
* 1/4 cup Galliano liqueur
* 3/4 cup orange juice

PREPARATION:
Beat all ingredients for 2 minutes in mixing bowl. Pour batter into greased coffee can or manufacturer's insert and cover. Bake in covered crockpot on high for 2 to 3 hours. Remove cake and dust with powdered sugar.

Instant Ice Cream Cake is perfect anytime.
INGREDIENTS:

* 1 standard 2 layer cake batter, any flavor
* 1/2 gallon ice cream, any flavor(s)
* 8 ounces whipped cream or topping
* optional toppings or decorations

PREPARATION:
Bake cake according to directions in one 8-inch round cake pan and one 8-inch square pan. Once cool, place round cake layer in the bottom of a similar width mixing bowl. Cut square cake into ladyfinger-sized (2x4 inch) pieces.Press these pieces all along the sides of the bowl and have it meet the bottom round piece. Pinch all the seams together. You should not be able to see any of the bowl.

Put any flavor of your favorite ice cream(s) inside. Be creative, Use Strawberry, Vanilla and Blueberry for the 4th of July, or Strawberry for Christmas and put green food coloring in the whipped cream.

Place plastic wrap directly on top of the ice cream. Freeze. One half hour before serving. Remove cake from bowl. Dip bottom of bowl in warm water if necessary. Ice the cake with the whipped cream. Decorated as desired.

Walnut Fudge

INGREDIENTS:

* 6 tablespoons butter
* 1/2 cup cocoa
* 1 pound box of powdered sugar
* 1/4 teaspoon salt
* 4 tablespoons of milk
* 1 tablespoon vanilla extract
* 1 cup chopped walnuts, lightly toasted

PREPARATION:
Line a loaf pan with aluminum foil. Grease with butter.
Melt butter in top of double boiler over simmering water. Add cocoa, stir until mixed. Add the rest of the ingredients, except the nut. Stir until smooth and sugar has melted.Stir in the nuts.
Quickly spread in loaf pan. Cool and cut into 1 inch squares.
