I know the SBTS in Kentucky was quite liberal at one time. The pastor of my parent's church went there and he is not very theologically sophisticated and generally willing to cozy up with any liberal movement or trend. It is rather pathetic to watch.
That being said, I it is very conservative now. Eugene Merrill is there and I have a few books by him. They also hired Kurt Wise who got his PhD in Palentology at Harvard under Gould. He is probably the most respected Creationist in the world, at this time.
You will get Greek and Hebrew at both places.

Southern! Definitely Southern. I have checked out many seminaries and Southern is excellent. I visited the school campus as well. I believe you could still get great academics from Southeastern, but Albert Mohler has really beefed up the academic standards at Southern. Also if you work at UPS in Louisville part time while attending Southern, you get benefits and the offer a tuition reimbursment program. Southern is definitely NOT liberal anymore. It was before Albert Mohler became president.

Trinity Evangelical seminary in Deerfield, Illinois has an excellent reputation. While it was first organised, I think, by the Evangelical Free Church, it also has a lot of Baptist teachers.
