I agree with Mintee that the best solution may be to double the recipe (or triple) and save the extras or give them away as gifts. You don't even have to make the extra filling into cobblers...you could put it in a freezer ziplock and freeze. The next time you make cobbler or pie or fried pies, etc all you have to make or buy is the crust!

Also, you can used canned biscuit dough to make baked "fried" pies. Flatten each raw biscuit out a little bit, add a dollop of peach cobbler, fold it over, pierce and bake.

If the cobbler's already baked, theres not much you can do but
scrapeit off (if its on the top.) If unbaked, and on the top, I would spritz real fast under the sink water spray, then doctor up with a little lemon juice and sugar, or better some kind of sparkling soda or juice. I dont usually use cinnamon in my peach dishes either.

Try adding more flour, more sugar and more milk for the cobbler part to try to even it out.
I use a recipie that doesn't call for cinnamon: just milk, flour, sugar, baking powder and a large can of peaches. It is fantastic.

not much you can do to take out a lot of cinnamon.. maybe just double the recipe ingredients and freeze the 2nd cobbler for another meal later..

there's not too much you can do.. BUT... if you just added it to the peaches without mixing it into the pie shell, you can attempt to just wash your peaches off.. put them in a strainer and rinse the excess cinnamon off, and just continue on with it... i don't know your recipe so maybe you could add more glaze or if you have any peach syrup left outta the can... you don't want a cinnamonny chalky tastin pie honey.. anything is worth a try.

If it's already baked, what about serving it with vanilla ice cream on top?
