If you've never roasted garlic before, you'll be surprised at how easy it is. I find that a toaster oven works beautifully without heating up the entire kitchen. Start with a head or two of garlic. Use a sharp knife to cut about 1/2 inch off the top (pointy end) of the head. Place it cut-side up in a oven-proof dish about the same size as the garlic:Brush or spray the cut surface with a little olive oil, and sprinkle it with salt and pepper, if you want. Cover it tightly with foil, and place it in a 400F oven. Bake it for 30 minutes, remove the cover, and bake for about 15 more--you will see the cloves begin to rise out of their paper a little. Allow it to cool, and squeeze, scrape, peel, or otherwise coax the roasted garlic out of the skin. You're now ready to use it in a recipe or just spread it on a slice of good, toasted bread. Mmmmm. (Sorry, it's that good!)

Try using a cooler oven. Wrap each bulb of garlic in tinfoil, cover with olive oil and place on ovenproof dish. Roast at 180 degrees for 30 minutes.

Neat little trick I used just last night. Take the garlic you need. Don't peel it. Place it into a 2 cup measuring cup. Add 1 cup water. Microwave for 30 seconds. Take it out and drain it and peel it. Put a paper towel on a plate with the garlic on top of the paper towel. Microwave for 10 - 15 seconds. It should work perfectly for you.

You need to roast the garlic without peeling in order to prevent burning and retain moisture.

First, cut clove in half and place it on a small piece of aluminum foil. Drizzle a little Extra Virgin Olive Oil on top, wrap it up like you would a fruit basket and bake for about one hour. When you start to smell the garlic strongly it should be about done.

If you don't own the garlic roaster, the next best thing is to put them on a cookie sheet with foil wrapping around them. Bake them at 325 degrees for 15 minutes, then check on them. They should be soft and squishy if still hard, keep baking for 5 minute intervals until done.

simply cut the very top of the garlic bulb off (so you expose the cloves a bit), drizzle with olive oil and bake for a half hour
