I'd have to agree with peanut oil. That's what usually is used with frying up a turkey, but at the same time, this is used when pressure cooking. That's the way my dad always does it anyway...

Anna: I have been cooking for 60 years and strongly advise AGAINST cooking a turkey in hot oil. It is so extremely dangerous, not only to you, but your children and anyone else
in the immediate vicinity. Using the old fashioned oven is still the best and most delicious way. If you have no oven, cut up the portion(s) of the turkey you like, put in large pot, brown in butter and add your favorite spices and a teensy amount of apple juice and simmer for about an hour. You want no pink meat at the center. Eat hearty! Put a lid on the pot.

every really good recipie that I ever saw in South Louisina called for peanut oil. I was told why at one time, but age has gotten the best of me. Trust me however,...I never had a bad fried turkey done that way.

oh yeah,....be sure to inject the seasonings in the turkey well in advance, a day or so for best flavor. Good luck!

Use peanut it has a better cooking tempature than vegetable and canola. and u never use olive oil its too over powering. You will find the big jugs of peanut oil next to turkey deepfryers at walmart or in the oil section of the supermarket...and im jealous i love deepfried turkey. so yummy.

Peanut oil because it has a high smoke point. Just be very careful.
