I just like to throw a punch or backhand whenever I see the opportunity presenting itself(ex: when they lower their guard in one part of the body). Also, grabbing people's legs when they kick is also fairly effective, especially if they kick at your mid-section or above.

The good ole jab to the nose is a very good move. When your nose is broken (and it happens WAY too easily) you cannot breathe correctly, your eyes well up with tears making it hard to see and it generally just sucks.
This also depends on what you mean by "subdue an opponent". If we are talking about a true self defense situation where you may get seriously hurt or even DIE if you screw up, then it's time to get NASTY. Gouge the eyes, punch to the throat, kick them in the knee...if you are in fear for your life, all of these work and work well. If you are talking about your simple bar room brawl, it will land you in jail for excessive force though.
if we are talking about a typical fight though, the opponent will usually "load up" for a haymaker punch- usually right handed. He may jab a few times first, but the haymaker will come. You twist yourself and sidestep slightly to his inside (moving in toward his left side) and parry the punch. Moving will take you away from most harm, but make sure you put that parry out there just in case. Your own right hand will be in position to deliver a very nice blow of your own preferrably to the left side of his chin (his left that is). Done correctly, the "chin music' or "hitting him on the button" ends more fights than almost anything else.

My favorite move is to jab with my right leg to set up a fake right leg kick and actually jump in with a right hand. An ax kick to a crescent is a good one too.

eye gouge, punching the nose (doesnt need to be hard, just be quick) kick to the groin, if you get speared to the groud wrap your legs around their waste and your arm around their next and pull yourself straight, yanking their head and chocking them. good luck, pepper spray also works great.
