Chinese Baby Corn is a relatively new vegetable. Tender and sweet baby corns are often used in Chinese dishes and salads. Seeds are sown in spring and are cultivated like regular sweet corns. Many regular corn varieties have been used to grow baby corns, but often resulting in baby corns in relatively poor quality. Corn ears should be picked for vegetable use within 5 days when silking. If not harvested at this stage, corn ears will develop into full size regular corns.
