Also what is the best temp of the oil for cooking the turkey?

Yes brine away, when you Deep Fry the outside seals in all that moisture you trying to get from you brine, wash it first and pat the outside fry before you DF, you got my mouth watering just thinkin about it, be careful and Enjoy

Your choice on the brine soak, but it's not necessary.
The temp is the important thing! 350-375 F. Any lower and it will absorb a lot of oil.
Make sure you use oil with a high smoking point, like canola, safflower, or peanut oil. I personally think peanut oil gives the best flavor. You can also try some flavor injections; I like cajun seasonings.
And most of all, follow the safety directions! It can be very dangerous!
If cooked at the proper temp, the turkey skin will have more fat and calories than a roasted bird would, but skinless portions are reasonably close in fat and calories to roasted.

I would inject it all over with marinade. I like the Tony Cachere's butter creole flavor. Ya also need to cajun salt up the outside to get that nice crispy crust. You can't use enough cajun seasoning. And peanut oil is the best oil to use for frying. Just make sure to do it outside and not in a garage. And try to keep your oil as close to 350 degrees as possible.
Just ignore those fat conscious naysayers. Deep fried turkey is worth every bit of calorie sinning that you do.

Be very careful - deep-frying turkeys has been the cause of several house fires. Why not cook it the old-fashioned way (tasty and much healthier)
