Boneless skinless white meat, pseudo-fried. Season your flour well (salt, pepper, onion powder, garlic powder, and paprika) then flour the meat. Pour about 2 tbl of cooking oil onto a cookie sheet with sides, and place your chicken on it. Bake about 25 min at 375 degrees Fahrenheit, then turn each piece over and bake same time and temp again. This is much better than standard fried chicken. There's less fat and every bit as much flavor.

I like to put 3 or 4 breasts in the crock pot on low with a can of Chile Verde sauce and about a cup of water. Cook it on low for about 8-10 hours (while you are at work). When I get home, it is falling apart. I take onions and cheese with corn tortillas and make enchiladas. Pour another can of the Chile Verde sauce over the top with some sliced black olives and lots of cheese and bake for 30 mins. on 350. Enjoy!
