Chi-Chi's Mexican Fried Ice Cream
1/2 cup vegetable oil
2 flour tortillas
1/2 teaspoon ground cinnamon
2 tablespoons sugar
1/4 cup cornflake crumbs
2 scoops vanilla ice cream
whipped cream
2 maraschino cherries, with stems

Fry each tortilla, one at a time in hot oil over medium/high heat until crispy. This should take about one minute on each side.
Combine the cinnamon and sugar in a small bowl.
Sprinkle half of the cinnamon mixture over both sides of the fried tortillas, coating evenly. Not all of the sugar mixture will stick to the tortillas and that's okay.
Combine the other half of the cinnamon mixture with the cornflake crumbs in another small bowl. Pour the cornflake mixture into a wide shallow bowl or plate.
Place a large scoop of ice cream in the cornflake crumbs with your hands roll the ice cream around until the entire surface is evenly coated with cornflake crumbs. You should not be able to see any ice cream.
Place the ice cream scoop on the center of the cinnamon/sugar coated tortilla.
Spray whipped cream around the base of the ice cream. Spray an additional pile of whipped cream on top of the ice cream. Put a cherry in the top pile of whipped cream.

Fried Mexican Ice Cream

Ingredients

1 pt Vanilla ice cream OR other flavor
1/2 c Crushed cornflake OR cookie crumbs
1 ts Ground cinnamon
2 ts Sugar
1 Egg
Oil for deep frying
Honey
Whipped cream

Instructions

Scoop out 4 to 5 balls of ice cream. Return to freezer. Mix cornflake crumbs, cinnamon and sugar. Roll frozen ice cream balls in half of crumb mixture and freeze again. Beat egg and dip coated balls in egg, then roll again in remaining crumbs. Freeze until ready to use. (For thicker coating, repeat dipping in egg and rolling in crumbs.) When ready to serve, heat oil to 350F. Place 1 frozen ice cream ball in fryer basket or on perforated spoon and lower into hot oil 1 minute. Immediately remove and place in dessert dish. Drizzle with honey and top with dollop of whipped cream. Continue to fry balls one at a time. Balls will be crunchy on outside and just beginning to melt inside.
Makes 4 to 5 servings

Chi Chi's Fried Ice Cream

Ingredients:

1 pint ice cream
2 eggs -- divided, beaten
1/2 teaspoon vanilla -- divided
2 1/2 cups sweetened cornflakes -- crushed
1/2 teaspoon ground cinnamon
Cooking oil -- for deep fat frying

Place 4 scoops (about 1/2 cup each) of ice cream in seperate plastic bags.

Freeze for 1 hour or until very firm.

In a small mixing bowl stir together 1 egg and 1/4 teaspoon vanilla. In a shallow bowl carefully stir together cornflakes and cinnamon. Dip each frozen ice cream ball into the egg mixture then roll it in cereal mixture.

Return coated ice cream balls to the freezer, for one hour, or until
firm. Reserve reamining cereal mixture.

In a small mixing bowl stir together the remaining egg, and vanilla.

Remove coated ice cream balls from the freezer. Dip ice cream balls into egg mixture, again, and then roll them in the remaining cereal mixture.

Cover and freeze for several hours or until firm.

In a deep fat fryer or heavy saucepan, fry frozen coated ice cream balls, 1 or 2 at a time, in deep hot oil (375 degrees) for 15 seconds, or until golden brown. Drain on paper towels.

Serve with melted chocolate, honey, plain or with fried white tortillas dipped in cinnamon sugar.

This recipe yields 4 servings.
