This depends on a few factors.
1) The potatos should be room temperature before you begin to cook them.
2) The oil should be 450 degrees.
3) The size you cut the potatos.
If you are cooking string potatos, then they should take no more than a three or four minutes.
If you are cooking potato logs, then it should take about five to six minutes.
When they are golden brown in color, they are done.
WARNING: DO NOT STICK YOUR HEAD OVER THE PIT OF HOT GREASE TO LOOK AT THE POTATOS!

If you are truly "deep frying" them they are done when they float. What I mean is if the fries are completely submerged in the oil they will float when they are done. The same simple process will work with many fried foods, chicken wings, cheese sticks, etc. It won't work with donuts.
