You don't, probably not until you get to the restaurant. But if she's scamming you for food, she's a pitiful sort of person and you're being nice to give her a free meal. But that should be obvious if she's, like, stuffing bread and silverware in her purse and asking to take your leftovers home. Or she could be crazy. So that would be another reason not to ask her out again.
Of course, she might offer to pay her own bill. I'm a liberated sort of person, but...I'm still a little unclear on the paying the bill issue on a first date. I mean, you asked, but then, she's not obligated, so maybe she should pay, but what if you've been dating for a while, then what? and what do you expect for buying her dinner...so complex.
I think you just have to think of yourself as a generous person and not analyze it too much. I think we've all bought things for people and thought, y'know, I wish I could just take that back, but you can't always do that. Generosity means that you get burned sometimes. If it happens *all* the time, rethink your policy. But if it happens sometimes...just goes with the territory.

If your no good at that, take her to a fish n chip shop and eat some where out side (under the stars or at a nice beach etc), the romance wont be lost if she's into you. Chances are if she is willing to sit at a table and dine with you for over an hour or so, she has some intrest in you, I think you will know by the end of the meal, simpply by the amount of talking and laughing thats gone on.

If I wasn't into the guy or at least willing to get to know an unknown person, I wouldn't go. It isn't worth 3 hours of my life sitting there with someone I don't particularily care for just for a meal. I can have a bowl of cheerios in front of the TV instead.
