Lima Beans that haven't been soaked will take abouth three hours from rapid boil stage. If you don't mind a suggestion, put your limas in water and microwave them on high for about thirty minutes first. Cuts cooking time down to one hour!

Its late/I'm tired/so here goes. My recipe for the best beans ever.Of course you must serve them with home-baked corn bread. No fancy typing here. Beans double after soaking, so how much do you want? Good beans are soaked overnight.
Let's say 3 cups beans in a large pot. Pick out all rocks and dark colored beans. Rinse thoroughly! Cover with water, preferably non-chlorine, add 1 tablespoon baking soda and mix well. Soak overnight. Next day about 3 hours before dinnertime,rinse beans again and cover with clean water.
Add 2 meaty ham hocks/or cubed (real) ham or if you can't afford it, dice some bacon and fry crisp. When bacon done pour off grease but keep some and add 2 diced onions/2 stalks diced celery/ 2 large shredded carrots. Saute' this until onions are golden. Add this to bean pot. Add 2 tblspns good vinegar/1 tblspn. sugar/3 bay leaves/savory to taste. No salt until almost done. Cracked pepper/garlic salt/ maybe l small can tomatoe sauce if you want. Let 'er cook until beans very soft. Bake some corn bread and fresh butter and you're livin high on the hog!

GREEN LIMAS:

To Prepare: Wash lima beans thoroughly. Shell just before cooking. To shell beans, remove thin outer edge of pod with sharp knife or scissors. Beans will slip out.

To Cook: Heat 1" salted water (1/2 tsp. salt to 1 cup water) to boiling; add beans. Heat to boiling and cook uncovered 5 minutes. Cover and cook 15-20 minutes longer or until tender. Drain.
