Perfect Pumpkin Pie
Original recipe yield: 1 - 9 inch pie
PREP TIME 15 Min
INGREDIENTS
1 (15 ounce) can pumpkin
1 (14 ounce) can Sweetened Condensed Milk (NOT evaporated milk)
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9 inch) unbaked pie crust
DIRECTIONS
Preheat oven to 425 degrees F. Whisk pumpkin, condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.
Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

Apple Butter Pumpkin Pie (from Paula Dean)
1 c. apple butter
1 c. fresh or canned pumpkin (not pie filling)
1/2 c. packed brown sugar
1/2 t. salt
3/4 t. ground cinnamon
3/4 t. ground nutmeg
1/8 t. ground ginger
3 eggs, slightly beaten
3/4 c. evaporated milk (I use heavy cream)
1 unbaked 9-inch pie shell
Sweetened whipped cream, for garnish
Preheat oven to 425 degrees F.
Combine apple butter, pumpkin, sugar, salt, and spices in a bowl. Stir in eggs. Gradually ad milk and mix well. Pour into pie shell. Bake for about 40 minutes or until set. Don't garnish with the whipped cream until the pie is cool.
If the crust begins to brown, place tin foil around the crust and lower the oven temperature.
If desired, you can use praline pecans as a topping.

Made from a real pumpkin.....
3/4 cup packed brown sugar
2 eggs
1 1/2 table spoon of melted butter
1 table spoon of molasses
2 cups pumpkin
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon cloves
pinch of salt
1. Beat eggs well. Add to other ingredients.
2. Mix well.
3. Pour info unbaked pie shell. Bake at 450 for 10 minutes.
4. Reduce heat quickly by opening the oven door for 1 or 2 minutes. Then turn down to 325.
5. Continue baking for 30 minutes or until tooth pick comes out clean.

HOMEMADE PUMPKIN PIE
2 eggs, slightly beaten
1 (16 oz.) can solid pack pumpkin
3/4 c. sugar
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. nutmeg
1 1/2 c. (12 oz.) can undiluted Carnation evaporated milk
1 (9") unbaked homemade pie shell with high fluted edge or 1 (9") frozen pie shell
Preheat oven to 425 degrees. Combine filling ingredients in order given; pour into pie shell. Bake 15 minutes. Reduce temperature to 350 degrees. Bake an additional 45 minutes or until knife inserted near center comes out clean.

You will need to make 2 pies for 10 people....
Make 1/2 recipe of Pie Crust for 2 Pies.
OLGA's PIE CRUST:
4 cups flour
1 Tablespoon sugar
2 teaspoons salt
1 3/4 cup Crisco Shortening
1/2 cup cold water
1 Tablespoon vinegar
1 egg
Stir the flour, sugar and salt together in a medium size bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs.
In a small bowl beat together water, vinegar and egg. Add to flour mixture until the dough comes together.
Gently gather dough particles together into a ball. Wrap in plastic, and chill for at least 30 minutes. Divide into 4 balls. Lightly flour sides of the ball and roll out on lightly floured board or pastry cloth. Makes two 9-inch double-crust pies.
Note: Dough can be refrigerator up to 3 days. It can be frozen until ready to use; thaw until soft enough to roll.
OLGA's PUMPKIN PIE:
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 1/2 cups pumpkin puree, canned or fresh
1 2/3 cups evaporated milk (I use 1 (12oz.) can)
2 eggs, lightly beaten
1 unbaked pastry shell (9-inch)
Combine sugar, salt, and spices in a large mixing bowl. Add pumpkin, evaporated milk, and eggs; mix well. Pour into pastry-lined pie pan. Bake at 425 degrees for 15 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge. Reduce heat to 350 degrees and bake 40 minutes or until center is set.

I always use the recipe on the side of the pumpkin can. They tend to be tested and reliable recipes. They always taste like pumpkin pie to me! Best of all...all of your ingredients are right there on the can so all you have to do is go to the store, pick up the can, and grab what you need. No planning necessary!
