I have been making pasta cassorole for sometime now. on top of the cassorole i add a layer of cheese to make it crispy. but it doesn't crisp, it melts, how can i make it crisp without burning the cassorole?

Once the casserole is done and the cheese is melted you can place it on broil (top burner) of oven and watch it closely... within minutes it crisps... to long htough and you have burnt the top layer... This has always been my "cheater" way of crisping...

Do you cook the casserole first and at the very end add the cheese? That's what I do and I also turn the oven from bake to broil and I watch it very closely. Sometimes a mix of cheese helps too. I use cheddar and Parmesan because Parmasen seems to crisp easier.

Put the cheese on at the begining of cooking, make your layer of cheese a little thinner use a dryer cheese like parm or asiago, and use your broiler at the end to crisp it up.

before putting the cheese on top...
put the cheese in a bowl and add some cooking oil to it. just a little bit. just enough to coat the chese. the oil will attract more heat, and make the cheese brown and crispy.

I'm no cook, but perhaps you should try something else besides cheese - bread or something. If you like the cheese, put it under whatever you choose to make it crispy.

Put it under the grill and the cheese will crisp up. keep an eye on it though as it may burn easily

The moisture content in the cheese you are using can be a factor.

Try using an aged romano or parm. regiano, they will crisp up better than mozzerella

add a little bit of butter on top of the cheese, that should make it crispy

cheese wont mke it crispy..it will only melt! Try something else like crispy noodles or something like that.
