I have skim milk & buttermilk in my fridge...no powdered milk. Any suggestions? PLEASE HELP! augh!! :)

Skim milk may not be rich enough but it will be less calories. Try the buttermilk instead, it will be just fine if you add 2 extra egg yolks.

Pumpkin Pie

"This recipe not only makes the best pumpkin pie, but it's oh so easy too! Serve with whipped topping."
Original recipe yield: 8 servings

INGREDIENTS
1 cup white sugar
1/2 cup packed brown sugar
1/4 teaspoon salt
2 teaspoons ground cinnamon
2 eggs
1 (15 ounce) can pumpkin puree
1 1/4 cups milk
1 (9 inch) unbaked pie crust

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large mixing bowl, stir together white sugar, brown sugar, salt, and cinnamon. When these ingredients are well mixed, stir in the eggs followed by the pumpkin and milk. Transfer mixture to the pie crust.
Bake at 350 degrees F (175 degrees C) for 1 1/2 hours, or until a toothpick inserted into the pie comes out clean. Cool before serving.

Eeps. Someone suggested to me here on Yahoo! answers that it's a simple process to evaporate your own milk -- put it in a cooking pan and simmer it until 40 percent of it is gone.

HOWEVER, I think that sounds like a lot of trouble. Try two tablespoons of butter to 1 cup of skim milk (I don't know how much you need). I've read some recipes that use just skim milk. I think it will come out fine -- just with a slightly different texture.

Condensed milk is very sweet, thick and syrupy. So your pie will probably be OK but it will have a completely different texture. If your have to keep any left over pie in the refridgerator it may harden. You can buy pies online. Tootie Pie Co. makes the best Homemade Pumpkin Pie.

Not much that I can think of but you could probably boil your ordinary milk on low until it reduces by half, then cool and add to your recipe. I believe that would work. Remember if the recipe calls for 14oz. of evaporated the you need to cook 28oz. of regular milk to get that 14oz. I would use the skim milk and add a teaspoon of sugar to help with the reduction. Hope it works!

hey there ;i have looked in some of my books and they all call for can milk..If you want to take a chance use the butter milk not the skim because there isn't any milk fat in it to make the pie stand up..Good Luck
