my son has anaphylaxis, and has various food allergies hes never had a birthday cake and i think its about time he did

Welfare Cake

"This cake is so moist that you would swear it was from a box!"
Original recipe yield: 1 - 9x13 inch pan.
Servings:24

INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

One nice Russian cake "Napoleon".I don't know any source apart from my grand mother. Dough: 200g of margarine-chopped, add by small portions flour and mix them together.when it's all together divide for 5-6 parts and put in to fridge for up to 1 hour. After one by one take them out, make a thin list and put in to the oven for max 12 min (190oC) You will see when it's ready. For cream use a jam. use one list for crumbs to put on the side of the cake and on the top.
PS I did check my margarine: it's doesn't contain any egg, milk or nuts

-CHOCOLATE CAKE ingredients: *1-1/2 cup flour *1/3 cup cocoa powder *1 tsp baking soda *1/2 tsp salt *1 cup sugar *1/2 cup vegetable oil *1 cup cold water (or ice coffee) *2 tsp vanilla extract *2 tsp vinegar

Preparation: Preheat oven to 375°F (190°C). Use a small brownie size pan (no greasing required). Mix all the dry
ingredients right in pan. Mix all the wet ingredients in separate bowl except the vinegar (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add the vinegar quickly and stir in — immediately put the pan in the oven and bake for 25 to 30 min. Cool thoroughly.
Optional: after you add the vinegar, you can put some frozen cherries, raspberries or cranberries on top of the batter (or you can mix them in beforehand)

-VEGAN CAKE ingredients: *1-1/2 cups flour *1 cup sugar
*1/4 cup cocoa *1 tsp vanilla *1/2 tsp salt *1/3 cup oil
*1 tsp white vinegar *1 tsp baking soda *1 cup cold water

Preparation: Mix all ingredients together until smooth. Grease and flour a loaf pan, and bake for 45 minutes at 350° (175°C). You can also add chocolate chips and/or nuts.

EGGLESS CAKE

1/2 tin condensed milk (200gms)
2 3/4 cups plain flour (280gms)
1 tsp baking powder
1/2 tsp baking soda (soda bicarb)
2 tsp icing sugar
1/2 cup butter melted (60gms)
1/2 tsp vanilla essence
100 ml milk
100 ml soda water
Method

Sieve flour, baking powder, baking soda, sugar, all together 2 to 3 times. Keep aside.

Pour condensed milk in a bowl. Add the butter, and beat well till smooth. Add the flour spoon by spoon, mixing into the condensed milk mixture. In between, add milk as required if the butter begins to get too stiff.

[Stir the mixture in one direction only all the while. This will incorporate more air and make the cake lighter].

Once all the flour is used up, beat the batter as above till light (5-7 minutes). Add the soda and mix gently till smooth.

Pour into a greased cake tin. Do not smooth with a spoon etc. If the consistency is right this will not be needed.

Pre-heat over to 300o c. Place tin inside. Bake at 200o c for 5-7 minutes and 150o c till done. (35 to 40 minutes).

Poke with a skewer and check. Cool a little. Invert on wire rack. Cool completely before doing icing if any. Or serve warm with tea.

Makes a six round cake
Serves 6
Shelf life 1 week refrigerated)

Hi I'm actually looking for that too but noticed you were wondering about margarine. Well M & S have a standard sunflower margarine that is completely dairy free. It is very cheap in comparison to others at around 80p.

There probably are but i think I'd make a dummy cake out of card, ice it and fill it with things he'd like to eat.

A mud cake has no egg mik or nuts in, however I dont recommend feeding it to him, but it could be made to look quite nice.

YOU COULD MAKE HIM SOME SHORTBREAD, YOU CAN PUT FRUIT IN THE MIDDLE AND BUILD IT UP LIKE A CAKE, OTHERWISE HAVE YOU TRIED EGG SUBSTITUTE, THAT MIGHT WORK.
