You will need two unbaked pie crusts one for the top and one for the bottom.
Preheat oven to 425
Peel core and slice about 8 apples.
Mix with 3 tablespoons of flour
1 1/2 teaspoons cinnamon
1 teaspsoon nutmeg
1/8 teaspoons cloves
Put into a pie crust and dot with butter about 1 1/2 teaspoons, pour on 1/3 cup of honey and if you want it to taste really good if you have any instant hot apple cider mix add this as well dry of course do not add the water. Put the second crust on the top and then seal the edges. Bake at 425 for 8 mins and then reduce heat to 325 and bake for 30-35 mins.
Then if you want to have ice ceam inside you need to wait until you are ready to eat it and then slice it open and add your ice cream, this way it won't melt.

You are talking about Apple pie alamode.Which is merely Ice cream on the side or top of the pie.Link below pic also.
You can do it the easy way which is buy a pie crust already made then u blind bake(information below) it off in the oven.This Blind baking the crust prevents the pie shell from getting soggy. Then u buy a can of apple pie filling place that in the pie crust then add another unbaked crust on the top of the apple pie filling place a few slits in the top of it then bake 350 for about hour.

9 or 10-inch double pastry crust, prepared and rolled
6 to 8 medium Granny Smith apples, peeled and sliced
Sauce:
2 tablespoons cornstarch
2 teaspoons cinnamon
1/2 teaspoon salt
6 tablespoons sugar
6 tablespoons melted butter
2/3 cup light corn syrup
1 teaspoon vanilla
1 tablespoon lemon juice
Topping:
3/4 cup brown sugar
3 tablespoons flour
6 tablespoons light corn syrup
4 tablespoons softened butter
1/4 cup walnut halves
Preheat oven to 425 degrees F.
Place bottom crust in large deep-dish pie pan. Fill bottom crust with sliced apples. Combine ingredients in sauce mixture and pour evenly over apples. Combine ingredients for topping mixture. Put about 1/2 cup of the topping mixture on top of the apples and sauce mixture. Cover with top crust. Make several slits for steam. Bake for 45 minutes or until apples are tender and juices are bubbling. Remove from oven. Spread the rest of the topping mixture over the warm pie, being careful not to break the crust. Return to oven for 10 minutes or until topping is bubbly. Make sure you don't overcook, or the nuts could burn. Remove from oven and let cool completely before cutting.
there's no recipe where you put ice cream and it wont melt...sorry

An Easy way to make apple pie is to buy apples caramel cinnamon-sugar, and 2 pie crusts. put the appls caramel and cinnamon together and put it in the pie crust. Cut the edges off of the other pie crust and put it on top of the pie crust that has the apples. put it in the oven and bake it for about an hour.
