You want to make sure that you are using a baking apple so that your apple doesn't just desinigrate in the baking process. A couple are the Pippin, Granny Smith, Pink Lady or Gravenstein. Also, do you add a little bit of flour to your apples? This helps to make a more solid filling and thickens the juices that occur naturally in the baking process.

Are you cooking the apples before hand? Don't-or make sure you drain any excess fluid.
If you're not cooking the apples before you put them into the pie, try coating the apples in a bowl with flour, your brown sugar, seasoning. Are you adding more sugar than the recipe calls for? Try brown sugar instead of white.
Baking-are you using cold butter cubes when you add it it to the pie-Cold butter cubes helps.

Also, it depends on the type of apple you are using too? Use hard tart apples-stay away from softer apples like golden delicious and gala-they can be tricky.

Another short cut is what people use in peach pies to help it set up and that is corn starch-but I prefer flour.

Best Apple Pie

Crust
Macintosh apple, and only Macs peel and slice and put in shell.
Dump sugar about a forth of a cup over apples, sprinkle generously with cinnamon. Now put about 8 good size dabs of butter, I mean about 1 inch sq and 1/8 inch thick. Put on top crust, vent and sprinkle sugar over crust. Bake. (Foil the edges for the first 15 minutes to prevent over browning.)

This is a Blue Ribbon Winner, plus it is oh so easy. It comes out firm and yummy. My hubby says that is is hand pie, he can pick it up and eat it with his hand. Don't ask.

I mix the apples, spices, and about a 2 teaspoons of cornstarch. I also add a few pats of butter in with the mixture. Turns out great!

My Dad adds tapioca (not cooked of course) - I'm not sure if this is to help the soupiness, but I think that's what it is for. It's yummy, either way, so try it!!

hi there;you may want to add some flour(about 2tablespoons) to your apples along with your spices and sugar before you place into the pie crust; also you may want to experiment with different types of apples..Good Luck
