you know I like savory sweet potatoes/yams so here is one for roasted yam mash.

Get your self a sheet pan-some canola or vegetable oil, set the oven to 375 and with your hands rub oil over the yams-Skin On, put in sheet pan and sprinkle some kosher salt over them-cook until done-depending on the size-this can take up to 45 minutes to an hour. Remove from oven-when cool enough to handle remove the skins with your hands. Then chop up into large cups-add to a pot with some melted butter, minced garlic, and mash away-add a bit of nutmeg and salt to taste. You can also add some finely minced sage to give a little ectra kick too.

MICHIE's SWEET POTATO SOUFFLE:
3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1/2 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows
In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain.
Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon.
Starting with 1/4 cup orange juice, make mixture moist and fluffy.
Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top.
Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.

SWEET POTATO RISOTTO WITH PECAN Ingredients: *4 tablespoons butter *2 tablespoons minced shallots *1 medium sweet potato, cut in small dice, about 8 ounces or 2 cups *1/3 cup chopped pecans *2 to 3 cups vegetable broth *1 cup Arborio rice (about 6 to 7 ounces) *salt and freshly ground black pepper, to taste *1/2 cup fresh grated Parmesan cheese *1 tablespoon finely chopped green onion tops or fresh parsley
PREPARATION: Heat 3 cups of vegetable broth to the boiling point; reduce heat to the lowest setting to keep hot.
In a medium saucepan, melt butter; add minced shallot and pecans; cook until shallot is tender. Add rice and cook, stirring, until well blended.
Stir in sweet potato. Stir about 3/4 cup of the hot broth into the rice mixture. Cook over medium-low heat, stirring constantly, until liquid is absorbed. Continue adding liquid, about 1/4 to 1/3 cup at a time, stirring frequently, until the rice and sweet potato are tender (not overly soft). The texture should be creamy a little loose. This will take about 25 minutes and about 2 to 3 cups of broth. Stir in Parmesan cheese and green onion or parsley, then taste and add salt and freshly ground black pepper to taste.
Serves 3 to 4.

SOUTHERN FRIED SWEET POTATOES ingredients: *3 medium cooked sweet potatoes, cooled *salt *2 eggs *2 tablespoons water *1 cup fine dry bread crumbs *vegetable oil
PREPARATION: Peel and cut potatoes into 1/4-inch slices. Sprinkle lightly with salt. Beat eggs with water in a shallow bowl or pie plate. Put bread crumbs in shallow bowl or spread out on waxed paper. Dip potatoes in beaten eggs, then in crumbs.
Pour about 2 inches of oil into a heavy skillet and heat to 370°, or use a deep fryer.
Fry the prepared potato slices, a few at a time, until golden. Drain briefly on paper toweling and serve hot.
4 to 6 servings.
