Because of the heartiness and richness of the fowl, I suggest you offer two options to your guests. Both these wines, red and white each will stand up to the richness of your dish.

Red: Cabernet Sauvignon
White: Sauvignon Blanc (also known as Fume' Blanc)

For this dish, stay away from wines like white reislings, or the red bourdeaux.

Here is my latest fantastic favorite. A great red wine (Shiraz) brand called Woop Woop Shiraz from Australia and it is really super-great!

I would go with a Reisling. You are dealing with poultry so I would not get a heavy red!
