Candied Sweet Potatos w/ marshmallows
INGREDIENTS
4 pounds sweet potatoes, quartered
1 1/4 cups margarine
1 1/4 cups brown sugar
3 cups miniature marshmallows, divided
ground cinnamon to taste
ground nutmeg to taste
DIRECTIONS
Preheat oven to 400 degrees F
Grease a 9x13 inch baking dish.
Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.
In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.
Stir potatoes into marshmallow sauce. While stirring mash about half of the potatoes, and break the others into bite-sized chunks. Transfer to prepared dish.
Bake in preheated oven for 15 minutes. Remove from oven and cover top evenly with remaining marshmallows. Return to oven and bake until marshmallows are golden brown.

This one is good:
1 can sweet potatoes or yam (15 oz)
3 Tablespoons melted margarine
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 Tablespoons sugar
1/4 cup orange marmalade
1/4 cup chopped pecans
Mini marshmallows.
blend all well except the marshmallows. Heat in a casserole dish for 25 minutes at 350. Remove from oven, cover with marshmallows. Return to oven until marshmallows melt and brown (you can put your oven on low broil to quickly melt and brown the marshmallows)

MICHIE's SWEET POTATO SOUFFLE:
3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1/2 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows
In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain.
Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon.
Starting with 1/4 cup orange juice, make mixture moist and fluffy.
Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top.
Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.

I use the canned Princella sweet potatoes...mash them up, add 1/4 cup or so brown sugar and mix well. Add mini marshmallows, either mixing in or just on top/around the edge. Bake at 350 until heated through. Super simple and delish!

this is my favorite recipe............yum yum yum...smile..
SWEET POTATO CASSEROLE
1 1/2 cans sweet potatoes, drained and mashed
1 tsp. vanilla
Pinch of salt
3/4 c. white sugar
1 stick melted butter
1/2 c. canned milk
Mix all above ingredients together and put in a lightly greased casserole.
TOPPING:
1/3 c. softened butter
1 c. chopped pecans
1 c. brown sugar
enough mini marshmellows to cover the top
Mix ingredients together and spread on top of casserole. Bake at 350 degrees for 20-25 minutes.The marshmellows should be a nice golden brown and the caserole should be hot and bubbly. This casserole may be made the day before and put in refrigerator.

I sure do. First off, you cut up your sweet potatoes into 2's or 3's depending on the size, add them to boiling water with their peels still on..boil for 20 to 1/2 hour. In the mean time, set oven to 350 degrees. After done boiling, run them under cool water to take peels off. Get a pan, add about 3 tblsps of butter and distribute it in pan, next, gently cut up your sweet pot. on top of the butter. Then, add a little brown sugar to coat the tops, then add your marshmallows and I also add a few nuts on top. YUMMMMY!
