I would never bow down to schism which is what the reformation caused and lorded over the Catholic people by an adultrous King and a disobedient Dominican called Luther, and I will defend the honour of the Most Blessed Virgin against those who blaspheme Her, and belittle the Most Holy Eucharist.

Sorry, can't boast until I stop sinning. Do I explain my religion as best as I can to others - YES.
If the criticism from the person is wrong I check if the speaker would listen to the facts, before talking, or else I just put him/her on my "to pray for" list, as I do to all mentally challenged people. (i.e. Mr. Bush)
I temper what I say with the fact that we are all human.

As Catholics, we are most guilty of hypocrisy. In general, we don't evangelize, we don't read the Bible much, we don't follow Church teaching (i.e. birth control), etc. Not that we should bow down to criticism, but we should start by making our own lives a shining example. This will evangelize those around us most effectively.
Above all we must burn with zeal for God. Do we?

We Boast in the Lord (Father, Son, and Holy Spirit - the One true Triune God), but bow down humbly (physically or in our hearts) as any Christian should.

Good question. We should boast and be proud. But since we are all humans sometimes it is easier to take the soft option. I always seem to take the wrong option :(

I draw inspiration from the words attributed to St. Francis of Assisi: "Preach the Gospel at all times; if necessary, use words." I am proud of my faith and proud to share it, but I don't feel that I must force it down anyone's throat.

It is kind of embarrassing to have to admit your catholic, with the rampant pedophile abuse in the organization.
