Candied Sweet Potatos w/ marshmallows

INGREDIENTS
4 pounds sweet potatoes, quartered
1 1/4 cups margarine
1 1/4 cups brown sugar
3 cups miniature marshmallows, divided
ground cinnamon to taste
ground nutmeg to taste


DIRECTIONS
Preheat oven to 400 degrees F
Grease a 9x13 inch baking dish.
Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.
In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.
Stir potatoes into marshmallow sauce. While stirring mash about half of the potatoes, and break the others into bite-sized chunks. Transfer to prepared dish.

Bake in preheated oven for 15 minutes. Remove from oven and cover top evenly with remaining marshmallows. Return to oven and bake until marshmallows are golden brown.

This one is good:

1 can sweet potatoes or yam (15 oz)
3 Tablespoons melted margarine
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 Tablespoons sugar
1/4 cup orange marmalade
1/4 cup chopped pecans
Mini marshmallows.

blend all well except the marshmallows. Heat in a casserole dish for 25 minutes at 350. Remove from oven, cover with marshmallows. Return to oven until marshmallows melt and brown (you can put your oven on low broil to quickly melt and brown the marshmallows)

This is my favorite. You can use canned sweet potatoes (just heat them up on the stove) or bake them and then remove the skin. Mash with orange juice, (if you like them a bit sweeter use a little brown sugar) and butter. Squeeze the oranges for juice then clean out the pulp. Use orange halves with the pulp removed to create cups. Fill the cups with mashed sweet taters then put a marshmallow on top. Place in the oven until marshmallows are golden and melted.

Easy and good: Drain a large can of sweet potatoes - put in baking dish. Add a small can of (drained) pineapple either crushed or pieces and a small can (drained) of mandarin oranges. Sprinkle with a thin layer of brown sugar, dot with butter. Arrange a layer of marshmallows on top. Bake (uncovered) until heated through and marshmallows are browned.

Can adjust fruit to taste!

actually, whats really good, is if you mash the sweet potatoes, and then put marshmallows on top and bake it in a dish in the oven, it turns out amazing, and it tastes like pumpkin pie too! its weird lol!

if you are using fesh sweet potatoes....peal them cut them into biote size peices and place them into a baking dish put about 2c of light brown sugar all over them a pound of real butter cut into small pieces a 1/4cup water place the sweet potatoes in a 350 degree oven for about 45 minutes or until soft make sure you cover with aluminimum foil so they will not burn take out of over put your marshmellows on and place back into the over until they are brown about 10-15 minutes...
They will be really sweet and delicious.....
