DULCE DE LECHE(FROM ZACATECAS,MEXICO)my grandma and my dad make the best in the world
well i dont know if u really want o do it cause it takes like forever to be done...u need like the whole day to do this: U NEED A BIG POT LIKE FOR A WHOLE GALLON OF MILK AND THEN LIKE HALF OF ANOTHER.....THEN U LET IT SIT UNTILL IT RISES BUT BE CARFUL BECAUSE "SE CORTA" THEN U PUT A little more over 1/2 gallon of sugar and then u put like 5 sticks of cinnamon...then u stir for like 1/2 an hour and let it rise again but dont let it spill cause then u have to start all over again....and u do that untill it turns brown and thick...then u take it of the stove and stir again untill it cools down....but agin be very carfull cause it will get mest up if u dont do it rite...DONT stir left and then stir right...stir clock wise and just clock wise......oh and put a little bit of baking soda it helps it rise...u put it when u but the sugar...then let it cool down and its done.....and dont be picking it cause it gets mest up very easy...hope this helps if u got more questions e-mail me....id be glad to help....

Go to the local super Wal-mart and they have a Dulce de Leche box cake that is great, all you need to add is the frosting. Which is just whipping cream in a liquid form.

1 CAN OF CONDENSED MILK
TWO TIMES SAME MEASURE FROM THE CAN OF PLAIN MILK
4 EGGS
1 SOUP SPOON OF CORN STARCH

(1)Dulce de Leche Cream Mousse
INGREDIENTS: *1 cup Nestle's Dulce de Leche *3 to 4 tablespoons brandy *1 quart heavy cream *3 tablespoons confectioners' sugar *4 to 6 large bananas, sliced *1/4 cup grated milk chocolate, for garnish
PREPARATION:
Beat dulce de leche in the bowl of an electric mixer until light and fluffy.
Add brandy and beat until completely incorporated.
Add cream and confectioners' sugar and beat until the consistency of whipped cream. Remove bowl from mixer.
Using a rubber spatula, gently fold in sliced bananas.
Place in individual stemmed glasses or glass bowls, and refrigerate.
Garnish with grated chocolate and serve with Pirouline cookies.
Makes 6 servings.

(2)Rice Pudding - Arroz Con Leche
INGREDIENTS: *2 C. water *1 C. medium or short grain white rice *1 cinnamon stick, broken into pieces *1 can (12 fl. oz.) Carnation Evaporated Milk *1 can (14 oz.) sweetened condensed milk *1/2 C. raisins *1 1/2 t. vanilla extract *1/4 t. salt *2 large eggs, slightly beaten *Ground cinnamon
PREPARATION: Place water, rice and cinnamon stick pieces in small saucepan; bring to a boil. Reduce heat to low; cover. Cook for 12 to 15 minutes or until liquid is absorbed.
Remove cinnamon stick pieces. Stir in evaporated and sweetened condensed milks, raisins, vanilla extract and salt; bring to a boil. Stir a small portion of rice mixture into eggs. Add egg mixture to rice mixture; mix well with wire whisk. Bring to a boil. Cook, stirring constantly, for 2 minutes.
Serve warm or chilled. Sprinkle with cinnamon before serving.

Pastel Frio de Queso y Dulce de Leche
Rich caramel flavor is found in every bite of this creamy dessert
Crust
14 Marias® cookies, crushed
1/4 cup (1/2 stick) butter or margarine, melted
2 tablespoons sugar
Cheesecake
2 packages (8 ounces each) cream cheese, softened
1 can (380 g) dulce de leche, softened
1 package (4-serving size) vanilla instant pudding and pie filling 1 cup milk
2 cups thawed frozen whipped topping
Toppings
1/4 cup dulce de leche ice cream and dessert topping
1/4 cup roasted peanuts chopped (optional)
1 cup thawed frozen whipped topping
1.For the crust, place cookies in Stainless (4 quart) Mixing Bowl. Finely crush cookies using flat surface of Meat Tenderizer. Add melted butter and sugar; mix until well combined. Spread and press crumb mixture into Springform Pan fitted with glass bottom; refrigerate pan until ready to fill.
2.Place cream cheese and dulce de leche in Classic Batter Bowl. Microwave on HIGH 1 – 1½ minutes or until softened. Place pudding mix and milk in Small Batter Bowl; whisk until well combined using Stainless Whisk. Add pudding mixture to cream cheese mixture; whisk until smooth. Gently fold in whipped topping.
3.Spoon cheesecake mixture into pan. Gently spread and smooth surface of filling using Small Spreader. Cover pan with plastic wrap; refrigerate 1 hour or until filling is set.
4.When ready to serve, gently loosen edges of pan using releasing tool. Carefully lift and remove collar. Place dessert topping into Prep Bowl. Microwave on HIGH 10-15 seconds or until smooth and runny; drizzle over top of cake. Chop peanuts using Food Chopper. Sprinkle evenly over cake. Fill Easy Accent® Decorator fitted with open star tip with whipped topping. Pipe rosettes around edge of cheesecake. Serve using Slice ’N Serve®.

my mom (she's from argentina) takes a can of condensed milk and boils it for a couple hours. it's really good and creamy.
