Ingredients
4 green peppers
1 cupful of bread crumbs
8 – 10 olives
100g anchovies
1 tablespoon of chopped capers
2 large tomatoes, peeled, deseeded and chopped
2 tablespoons olive oil
2 gloves of garlic
2 onions (large) pepper and salt
Some fresh parsley, chopped
Method
Remove the stalk, tops and seeds of the peppers. Fry the onions and garlic lightly, add the prepared tomatoes, capers, olives, parsley, and chopped anchovies. Mix in the bread crumbs season with some pepper and salt. Be careful not to use too much salt, as the anchovies are quite salty. Fill each pepper with
as much of the mixture as it will hold. Then fry the peppers in the second tablespoon of oil turning them as they fry until done on all sides. Lower the heat to simmer and turn occasionally until the peppers look golden brown. These can be served hot or cold. I would have some nice crusty bread and butter or olive oil based spread and some green salad to go with them

With your bread so 'rich' I think the best spread or dip would be just a bit of extra virgin olive oil in a small plate or bowl to dip the bread in. Even butter would be 'too much' but the light flavor of the e-v-o-o would bring out the flavors of the sun dried tomatoes and the Italian cheeses. You may also consider adding some fresh herbs ... basil, oregano, or marjoram ... to the oil. Enjoy!
