I'm making twice baked potatoes and you have to scoop out the insides as most of you know. Does anyone have a good way to get the potato out of the peel? It seems I always tear the potato. Is there a special tool?

try an ice cream scoop or a melon scoop. and you don't have to scrape too close to the skin. leave about 1/4 potato inside the skin and this will help the shape hold during the second baking.

The trick to twice baked potatoes is to not attempt to get the entirety of the potato out of the skin. Leave a thin "shell" of potato, about 1/8" thick or so, still attached to the skin. This reduces the amount of tearing, and adds some stability to the whole assembly.

Use an appropriately sized spoon, and don't rush the process.

I use a large serving spoon, and cradle the potato in my hand. Also, if you haven't baked the potatoes yet, rub a little oil on the peel before baking, makes them more flexible.

I too use a spoon. The best tip I can give is not to go in too deep. Plan on leaving a thin layer of potato on the skin. It gives the dish texture and depth when you eat it.

I'm with 'cookie' on this one... a small ice cream scoop or a melon-baller.
