From a Christian perspective you are called to do these things but with the correct intent. These acts win no favor with God if they are done to win favor and recognition. You are to do them because it is in you nature to be charitable and caring and seek no recognition or reward.

Now then the desire to help people in this way shows a value to human life and the quality of life. A person should not have to beg for a meal. If it is time to eat and a person's plate is empty you fill it with out being asked.

Depends on the poor person. If they ask (as in applying for assistance, showing up at the bread line or food pantry) then they are willing participants with their dignity as intact as it can be. I have been on the receiving end of such charities, and if I get something I don't care for (like in Christmas baskets) I pass it along to another charity, since maybe someone else with think it's great. We have gotten food my kids wouldn't eat from the Food Bank and we just pass it on as quickly as possible and give thanks for what we can use. Where a lack of dignity is shown is in the giver seeking to gain esteem (in their own eyes, in the eyes of the recipient or others) or when the act is forced upon somone who appears in need, but didn't ask for your help. If you are looking for a way to contribute in a Christ-like manner, be sure not to judge the recipient as to the reason they need help, as it could be you someday, and give out of gratitude for how you have been given to. Make the gift match the recipients desire as best you can and know that the blessing comes from Spirit, not the gratitude (or lack thereof) of the recipient. If the people benefit and feel blessed, so much the better.
