Make sure you use cool cookies sheets for each batch! You can't put cookie dough on sheets just out of the oven or even ones that are warm. But extra cookie sheets so you have one or two in and one or two out each time!
If the recipes calls for butter use butter. Do not substitute margarine.
Make sure you are using fresh ingredients and are measuring correctly.

cookies that are spread out -like my oatmeal cookies that my brother dubbed cow patties, cause they looked like one that had set a while-need a little more flour. Try adding it 1/4 c at a time then write that amount on the recipe for the next time. PS if you can get to a restaurant supply house you can purchase a #40 scoop that makes just the right sized cookies.

hi there; first you may want to check your oven to see if its working like its suppose too.you would probably be wise to invest into a gadget that will give you a better temperature reading, you can find these with most of the cooking items in the store. Also may want to check all your dry ingredients expiration date on them, even the spices, all these things will have no life to them after awhile( 6 months for somethings).make sure that you are using the right flour/salt/sugar/baking powder/baking soda/ etc..these things can play a big factor in a recipe that you make..good luck and i hope that i help you.

gemmy has the right idea. if you use cold dough, it takes longer to melt and spread out in the pan and the result is a thicker cookie.
