I have been cooking for sixty years! and knew NOTHING when I married. Mama always said, "Oh get out of the kitchen, I can do it faster and better."

The cookbook I've referred to most through the years is "Joy of Cooking" by Irma Rombaur. In it she carefully explained every recipe. I understand the new issues has pictures.
My antique 1946 book is full of recipes replete with butter and cream. We had no issues about cholesterol back then. The current cookbook presents a more healthy diet.

My copy is stained and falling apart, yet I used it just yesterday to see what else to put in my ham and beans to jazz them up. The kitchen bookshelf must have at least 200 cookbooks, but I always depend on "Joy."

I have three suggestions:

-best all round cookbook is the Cooks Illustrated magazine...it is expensive, but you can buy a year bound at a time. It is outstanding...they will try 100 techniques for anything they recipe before giving you the best. Black and white small photos though

-next best is the Joy of Cooking or The Minimalist Cooks at Home....drawings and few photos though

-most beautiful is the The Beautiful Cookbook series...The Mediterranean one is the best and has great recipes and absolutely lovely photos...you can buy them at Borders in hardcover, sometimes softcover...

Go to the book store and browse the cooking section. Usually the cooks/chefs from the Food Network have some pretty nice cookbooks. For an experienced cook I'd recommend Emeril, Mario Batali or Tyler Florence.

Former Chef myself, we use to refer to The Professional Chef as our bible, but if you want pretty pictures I like Larousse Gastronomique. It's got great dictionary for an incredible amount of culinary terms. Also, if your friend is into appetizers and Amuse Bouche Amuse-Bouche: Little Bites That Delight Before the Meal Begins. And believe it or not French Laundry Thomas Keller actually put out a nice book.
Charlie Palmer-Great American Food
Gosh I could go on and on.. Good Luck-Also, you could also go in the realm of a two year subscription to a magazine which is nice becasue then your friend would get changing trends, pretty pictures and other sorts of information. As a chef-I think the a great magazine for the at home chef is Fine Cooking-Great pics-great short cuts in the kitchen and interesting articles.

I get compliments on anything I make that I use my plain old Betty Crocker cook book. Celebrity cookbooks tend to have really strange recipes in them that no one has the items to make or can't find in your normal grocery store.

Betty Crocker Cook Books are the best, old time recipes that have been around for generations! I love everything I cook from the recipes.
