How about a day at a local spa. They usually have all day packages with facial, full body massage, sea weed body wrap etc.
Or how about one of those total body scans. You are at the age that those are a good idea if you have not had one already.
If she is a collector you can always buy her a new piece of whatever she collects.
Does she have her own computer or do you share? She should have her own.

Plan a romantic weekend away for the two of you and wrap some hints in different packages so she can't figure it out till the last package.

How about a donation to a charity, and a homemade card with a list of the things you love about her? If you spend 20 minutes on it its a bad idea, but if you put a lot of time and effort into it it will show and be appreciated.
You could do a 7 theme, like decorating the outside with 7 things that remind you of her (a paper heart? a photo from your honeymoon? A piece of anything left over from your first Christmas?) and inside write 7 things you love about her, 7 things you love doing with her, 7 things you want to experience together with her in the future, etc. Or any other theme.
Or, you could pair the donation with a letter written to her. Or a poem. Honestly, if a significant amount of time and effort is put into it it doesn't matter how perfect or professional it turns out.

Buy a Nintendo Wii and say it's for both of your second childhoods. Gift wrap some nice jewelry in with one of the game boxes as a real surprise.
