Do you know how big china is? (1.3 billion!!?) There aren't one famous dish. In my opinion, "chinese food" should not be used to generalize food in china. It is wayyy too broad.

Beijing- Peking Duck(go to a hutong for these! They are the best and cheapest. A hutong is a old neighborhood)
Tianjin- steamed dumplings filled with meats and veggies

It depends where you are in China, for instance :
- in Beijing you have the Beijing Duck / roasted duck
- in Chengdu you have the spicy ( very spicy ) hot pot
Every town has it's own speciality.
