Like Cracker Barrel's? I love this recipe.

26 oz bag country style hash browns
2 cups shredded colby cheese
1/4 c minced onion
1 c milk
1/2 c beef stock
2 tblsp melted butter
1 tsp salt
1/4 tsp pepper
dash garlic powder


Preheat oven to 425

Combine hash browns, cheese, and onion in large bowl. Combine beef stock, 1/2 melted butter, garlic powder, salt, pepper in another bowl until well blended.

Pour over hash browns and mix well. Heat rest of butter in large oven proof skillet over high heat. When skillet is hot add hash browns.

Cook stirring occasionally until hot and cheese has melted. Put skillet into oven and bake for 45-60 min or until surface of hash browns are dark brown.

Overnight Hashed Brown Potatoe Casserole

Ingredients

(8 servings)

2 lb Frozen hashed brown potatoes
1/4 lb Butter
1 pt Sour cream
1 cn Mushroom soup
8 oz Chedder cheese; shredded
1 Onion; grated
3/4 c Milk* (optional)


Instructions

Cut butter into potatoes. Mix rest of ingred. together; pour over top of potatoes. Toss. *1/4 - 3/4 c. milk can be used in place of one-half of the sour cream. It will make a moister casserole, if desired. Bake in a 13x9" pan @ 350 for 1/2 hr covered and an additional 1/2 hr. uncovered. I have used Cheddar Cheese soup, but reduce the butter as it will be greasy with both. I also put additional shredded cheese on top during the second half hour of baking. Doubles well. Can be refrigerated overnight after mixing all together.

Here you go, quick, easy and only 4 ingredients

2 cans (10 3/4 ounces) condensed cream of celery soup (if you don't like celery flavor you can use mushroom)
2 cartons (8 ounces each) spreadable chive and onion cream cheese
1 pkg (2 pounds) frozen cubed hash brown potatoes
1 cup (4 ounces) shredded cheddar cheese

In a large microwave-safe bowl, combine the soup and cream cheese. Cover and cook on high for 3-4 minutes or until cream cheese is melted, stirring occasionally. Add the potatoes and stir until coated.
Spoon into a greased 13 in.x 9 in x 2 in baking dish. Bake uncovered at 350 for 35-40 minutes or until the potatoes are tender. Sprinkle with cheddar cheese and bake 3-5 minutes longer or until cheese is melted. Makes 10 servings.

This has been taste tested with my 6 yr old and he loved it.

1 cup onion, diced
1/4 lb. (1 stick) butter, thinly sliced
1 (8 oz.) container sour cream or plain yogurt (optional)
1 (8 oz.) pkg. Kraft Cracker Barrel sharp cheese
1 can Cream of Chicken soup
1 (2 lb.) bag frozen hash brown potatoes, thawed
1/2 to 1 cup potato chips or corn flakes

Stir together well the diced onion, sour cream or yogurt, grated cheese, thinly sliced butter, and Cream of Chicken soup. Add the hash browns and mix well.
Spread this mixture evenly in a casserole dish and top with crushed chips or corn flakes.

Bake at 350°F 1 to 1 1/2 hours.

Makes 8 to 12 servings.

4 cups frozen hash browns
1 (7.6-ounce) package butter and herb mashed potato mix
1 stick butter, softened
4 ounces cream cheese, softened
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups boiling water
2 cups prepared French-fried onion rings

Preheat oven to 350 degrees F.
Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

You can probably find a lot more online if you look up Tater Tot Casserole Recipe. My recipe for that is to brown 1 pound of hamburger meet. Line bottom of pan w/flat tatertots. Mix cream of mushroom soup in meet & pour over tots. Top w/lots & lots of shredded cheese & then line again w/tots. Cook at around 350 degrees for 30 minutes or so. You'll know it's done when the sides bubble.

Hashbrown Casserole
2 lb. bag of frozen hashbrowns or french fries
1/2 cup onion chopped
2 can cream of chicken soup
2 8 oz cartons sour cream
1 block cream cheese - softened
2 cups shredded cheddar cheese
6 oz bag one step stuffing
1/2 cup margarine - melted
1/2 teaspoon paprika

Preheat oven to 350. Place the hashbrowns in baking dish. Sprinkle chopped onion on top. Mix together soup, sour cream and cream cheese in separate bowl. Spoon that over the potatoes and onions. Sprinkle the cheddar cheese on top of soup mixture. Next, melt the butter and mix with the stuffing and paprika. Layer this on the very top. Bake for approximately 1 hour or until potatoes are tender.

I am not sure what hash browns and casseroles have in common, but..
Saute chopped onion...garlic....green peppers...red peppers...in olive oil with hash browns.

Those ingredients make perfect flavoring.
Casserole??? When cooked reheat in the oven.
