"Potato Pancakes" - Serves 6 to 8
5 cups grated potatoes; drained
1 tbsp. grated onion
2 eggs; beaten
1 1/2 tsp. salt
1/4 tsp. freshly ground black pepper
3 to 4 tbsp. all-purpose flour
1/4 cup sweet butter
Combine potatoes, onion, eggs, salt, pepper, and enough flour to bind. Drop by rounded tablespoons in hot butter; fry 5 minutes each side, until brown. Serve with applesauce or sour cream.

The potato cakes I like the most are called Potato Latkes (fritters)
I think it originated from Russian Jews
you need:-
4 Large potatoes grated (raw) 2 beaten eggs
4 level tablespoons self raising flour l level teaspoon salt
pinch of white pepper.
Grate potatoes finely to a pulp and leave in sieve to drain for 10 minutes (or put in clean tea towel and squeeze out moisture)
put in a bowl and add remaining ingredients and mix together
Use a heavy large frying pan put enough oil to a depth of half inch, when it is hot put a tablespoon of the mixture into the oil and flatten with the back of the spoon. Cook over a moderate heat on each side until a rich brown. Drain on kitchen roll tissue and serve at once, with meat, fish or veg dishes.

Potato Pancakes
Ingredients:

Nutmeg, to taste
Salt and pepper, to taste
4 fl. oz. Vegetable oil
Procedure:
Peel and coarsely grate potatoes.
Transfer the grated potatoes to a bowl and add the beaten eggs, onions, flour and baking powder. Season with nutmeg, salt and pepper. Blend well.
Heat the oil. Form the potato mixture into 12 uniform-sized pancakes and pan-fry them until tender, turning once when well browned on the first side. Remove them and drain well.
Crispy Potato Patties Recipe
INGREDIENTS:
2 cups mashed potatoes
1 egg, beaten
1 onion, minced
1/4 tsp. salt
1/8 tsp. white pepper
2-3 Tbsp. olive oil
PREPARATION:
Mix together mashed potatoes, beaten egg and onion in a medium bowl. Add salt and pepper and stir.
Over medium heat, heat olive oil in a medium size nonstick frying pan. Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 4 inch circles that are 1/2" thick.
Cook until bottom is browned and crisp, about 3-4 minutes. Carefully turn the patty over and cook the second side until brown and crisp, 3-4 minutes. Serve with ketchup or salsa.

This is my favourite:
Cold mashed potato, mixed with fried onion and plain flour. Season. Mix thoroughly and shape into cakes (being male I like BIG ones:)). For a special treat you can sneak a small lump of grated cheese in the middle.
Fry in your favourite oil until brown on both sides.
Dead simple - dead tasty. Enjoy.

Take cold left over mash potatoes, add 2 eggs and 1 tablespoon diced onions mix well. Make into patties. Fry in skillet with hot oil until golden brown.

If you have leftover mashed potatoes (cold works best), add a little chopped onion and some flour to make stiff. We like to coat them with some bread crumbs...but flour will also work, then fry in some oil until browned on each side. Good Luck !!!

INGREDIENTS
1 potato, cubed
1 cup butter
2 cups packed brown sugar
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup milk
1 (1 ounce) square semisweet chocolate, melted
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Bring a saucepan of water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool and mash. Grease and flour a 10 inch Bundt pan.
Cream butter, gradually add brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in mashed potatoes.
Combine flour, baking powder, cinnamon, nutmeg, and cloves; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in melted chocolate and pecans. Pour batter into a prepared 10 inch Bundt pan.
Bake at 350 degrees F (175 degrees C) for 1 hour or until cake tests done. Cool in pan 20 minutes; remove cake from pan, and cool completely before serving.

i just use mashed potato mixed with some fried onion, beat an egg in to it. shape into cakes and fry for 4 to 6 mins on each side.

Yeah shop bought ones are kind of bad. I dont know any specific places for potato cakes, but if you want a good drink with it, try out Crystal Light.
