Mix things they don't like with things they do. My son doesn't seem to like any kind of meat, so we hide cut up pieces of it in mashed potatoes.

Finger foods, try cutting up food and make it bite sized. Try things like, fruit, jello, wheel shaped macaroni with just a little bit of italian dressing or butter for flavor.

What you have to do is gradually introduce new foods to them. Like give them a quarter every time they try a new food.

Also make food look more exciting by cutting it into fun shapes wih cookie cutters. You can cut Chicken nuggets, Pancakes Sandwiches, etc. Ive found that kids will eat more if it looks more appealing.

And finally my neice gets a kick out of good ol' Green Eggs and Ham

We mix stuff into quesadillas. Know that my 1 and 2 year olds like the tortilla and cheese, so sneak small bits scambled eggs, chicken, veggies, etc into them. They also really like oatmeal, and Ill mix in flaxseed and cranberries in there.
Target archer farms also makes these organic fruit strips, my kids love, no sugar added.
Also look for things like pancake mix in the whole wheat versions.

Find out what your little one likes, and serve those foods in bite sized pieces. To introduce new things, introduce it, but don't expect that your little one will eat it. However, if they see you eat and enjoy it, they may be more apt to try it.
