The secret to healthy frying is... heat!

High heat turns the moisture in your food to steam, the steam expands, forcing its way out, and does not allow (much) of the oil to seep back in. The food cooks, the outside gets crispy and brown and... mmmm....

If you overcook, however, that steam runs out, and, voila! Greasy chicken, fries, whatever!

Peanut and canola have the highest tolerance (of the regularly available oils) for heat. This is referred to as a "high smoke point". Go with these.

Olive oil, in addition to bringing a flavor to food which you may or may not want, is not particularly good at standing up to high heat. In fact extra-virgin olive oils are not recommended for cooking at all, but rather as a flavoring agent like butter!

In deep fryers go with Canola oil. Pan-frying, olive oil is good. Remember, that even though some oils are cholesterol-free, they all have the same ammounts of fat.

Virgin Olive Oil is best. Must be 50 brands that will do the job.

Don't know much about the brands, but firstly is Olive Oil, then Safflower Oil.

Ask Martha Stewart she's on Y/A's...I think the best and healthy is Canola Oil.

olive oil its the best but its more pricey then the other stuff but its definetley better for you and tastes great!!!
