OLGA's PUMPKIN PIE:
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 1/2 cups pumpkin puree, canned or fresh
1 2/3 cups evaporated milk (I use 1 (12oz.) can)
2 eggs, lightly beaten
1 unbaked pastry shell (9-inch)
Combine sugar, salt, and spices in a large mixing bowl. Add pumpkin, evaporated milk, and eggs; mix well. Pour into pastry-lined pie pan. Bake at 425 degrees for 15 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge. Reduce heat to 350 degrees and bake 40 minutes or until center is set.
OLGA's APPLE PIE:
6 cups Cortland apples
2 tablespoons lemon juice
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
dash nutmeg
dash salt
1/4 cup flour
2 Tablespoons butter
Wash, peel, core and slice apples, toss apple slices in a large bowl with lemon juice to prevent darkening. In a small bowl combine sugar, brown sugar, cinnamon, nutmeg, salt, flour. Pour over apple slices and stir to mix well. Arrange apple slices in pastry-lined pie pan. Dot with butter and place top crust on pie, seal and flute edges. Cut slits in the top to permit steam to escape. Bake at 450 degrees for 15 minutes. Continue baking at 350 degrees for 45 to 50 minutes or until apples test soft with a fork and the crust is golden brown. Place a cookie sheet covered with aluminum foil on lower rack in oven to catch drippings.
BEV's FRUIT COCKTAIL PIE:
1 large can fruit cocktail, drained
1/2 pint sour cream
1/2 cup sugar
graham cracker pie crust
whip cream
Mix fruit, sour cream, and sugar together until well blended. Pour into pie shell. Bake at 350 degrees for 20 minutes. Cool and top with whip cream. Keep Refrigerated.

i've got constantly stumbled on that the CRUST is what makes or breaks pumpkin pie. Have a flakey, scrumptious crust, and your pie rapidly ROCKS! Have a skinny, crusty nasty crust and your pie sucks. Betty Crocker makes a reliable crust: Betty Crocker Pie Crust a million/3 cup Plus a million T shortening (or a million/3 cup Lard, I choose shortening!) a million cup Flour a million/2 teaspoon Salt a million Tb ice water shrink shortening into flour and salt till debris are length of small peas. Sprinkle in water, a million T at a time, tossing with fork till all flour is moistened and pastry extraordinarily much cleans the portion of the bowl. key is to no longer get it too moist. in many circumstances 2 T water is sufficient. the superb recipe I even have ever had for pumpkin pie filling is only the recipe proided on the portion of the can of LIBBY'S canned pumpkin (do no longer purchase the premade pie filling). stable success!

Perfect Pumpkin Pie
PREP TIME 15 Min
INGREDIENTS
1 (15 ounce) can pumpkin
1 (14 ounce) can Sweetened Condensed Milk (NOT evaporated milk)
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9 inch) unbaked pie crust
DIRECTIONS
Preheat oven to 425 degrees F. Whisk pumpkin, condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.
Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.
