I like to roast the sweet potatoes whole....let them cool, scoop meat out of the skin & puree them either by hand with a masher, in the cuisinart or with a potato ricer. Add to them some soft fresh butter, salt & a little maple syrup. For some extra pizazz, cut some apples into 1/2 inch square & sautee with some butter & a touch of cinnamon & pour them on top of the sweet potatoes. Very yummy.

SWEET POTATO FRIES
Sprinkle these tasty fries with salt and a little cinnamon, or sprinkle with cinnamon-sugar.
INGREDIENTS:
2 to 3 large sweet potatoes
oil for deep frying
salt and pepper
cinnamon or cinnamon-sugar
PREPARATION:
Cut sweet potatoes into 1/4 to 1/2- x 3-inch strips. Put strips in ice water until ready to fry. Dry with paper towels and fry in batches in 375° oil. When lightly browned and tender, transfer to paper towels to drain. Sprinkle with salt and pepper or salt and a little cinnamon or cinnamon-sugar. These are especially tasty with ham or pork.
Serves 4.

Using canned chunk sweet potatoes, spread them in a glass casserole dish, pour 1/2c orange juice, sprinkle with brown sugar and bake at 325 for 30 minutes. Top with miniature marshmallows and chopped pecans and broil until marshmallows brown and get gooey. Yum!

HONEY-GLAZED OVEN-ROASTED SWEET POTATO WEDGES
5 long slender 10-ounce red-skinned sweet potatoes (yams)
1/4 cup olive oil
1 teaspoon salt
Honey
Chopped fresh parsley
Preheat oven to 400°F. Peel sweet potatoes, then quarter lengthwise. Rinse potatoes with cold water; pat dry with paper towels. Place potatoes in large bowl; add olive oil and salt and toss to coat. Arrange in single layer on rimmed baking sheet. Roast 45 minutes. Brush with honey and roast until tender and beginning to brown in spots, about 15 minutes longer. Transfer to platter; sprinkle with parsley and serve.

2 1/3 cups sugar
2/3 cups water
2/3 cup oil
4 eggs
2 cups mashed sweet potatoes
3 1/3 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
1/2 teaspoon baking powder
1 cup coarsely chopped pecans
Preheat oven to 350 degrees F.
Combine sugar, water, oil, eggs, and sweet potatoes and mix thoroughly. Add dry ingredients and mix to combine. Add pecans and mix well. Divide between 2 greased loaf pans and bake for 50 minutes. Cool in pan to room temperature.
OR
Canola oil
1 large sweet potato (about 1 cup)
4 tablespoons melted salted butter
1 egg
1/4 cup bread crumbs
2 tablespoons all-purpose flour
Salt and freshly ground black pepper
1/4 cup chopped chives (reserve 1 tablespoon for sour cream topping)
1/2 cup fresh or thawed frozen corn
1 cup sour cream
In a shallow pan, heat oil to 350 degrees F.
Score sweet potato with a fork and microwave on high for 6 minutes or until cooked through. Let cool. Cut sweet potato in half, scoop out the flesh, and place it into a mixing bowl with the butter. Mash well. Add egg, bread crumbs, flour, salt, and pepper and mix well. Add the chives and corn and mix gently. Using 2 spoons to shape, scoop mounds into hot oil, cooking on both sides, in batches, until golden brown. With a slotted spoon or spider, remove fritters from oil and place on paper towel to dry. Mix sour cream, reserved chives, salt and pepper, to taste, and place a small dollop on each fritter when ready to serve.
