Peach Cobbler that my boyfriend loves.....
1 29 oz can sliced peaches
Topping:
2/3 c packed brown sugar
1/2c flour
1/2 c oats
1/3 c butter
3/4 tsp cinnamon
3/4 tsp nutmeg
Place peaches in a greased 8x8x2 pan.
Mix remaining ingredients, sprinkle over peaches.
Bake in 375 degree oven until topping is golden brown, about 30 minutes.
Sometimes I add some unsweetened tart pie cherries to the peaches. That's really good, too!

Peach Cobbler
Filling:
Butter an 8"X8" baking dish. Preheat oven at 425o F.
Mix 2 cups of sliced peaches with dash of salt,
Sugar to taste
1 beaten egg
Spread the peach mixture in the baking dish. Dot with butter.
Topping:
Sift together 1 1/2 cups of flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
Mix with 1 beaten egg
1/2 cup milk
1/2 cup melted butter
Pour this mixture over the top of the peaches. Bake about 30 minutes.

Get a yellow or white cake mix. Keep a couple of spoonfuls of the dry mix out and make the rest according to directions. Put it in the cake pan. Pour a can of peach pie filling onto the batter then sprinkle the preserves with the few spoonfuls of dry cake mix alone or mixed with a spoonful or two of brown sugar.
As the cake bakes it will come up over the peaches but not all of them.
Bake according to the cake directions.
Wallah! Peach cobbler.
Serve with Cool Whip or softened vanilla ice cream if you desire.

Biscuit Topping:
1 cup all-purpose flour
2 tablespoons cornmeal
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
Pinch salt
4 tablespoons unsalted butter- melted
1/3 cup buttermilk
1/2 teaspoon vanilla extract
Preheat the oven to 375 degrees F.
Saute peaches in butter, then add vanilla bean and sugar, and flambe with brandy.
Mix all dry ingredients with the melted butter, buttermilk, and vanilla until a dough is formed. Fill ovenproof dish with peach mixture, top with biscuit mixture, then bake for 15 to 20 minutes at 375 degrees until golden brown.
Serve with vanilla ice cream, garnish with fresh peach and raspberry puree.

PEACH COBBLER
This cobbler is wonderful after the chipotle-honey glazed pork (frankly, it's wonderful after anything).
Active time: 20 min. Start to finish: 45 min.
6 large peaches, cut into thin wedges
1/4 cup sugar
1 tablespoon fresh lemon juice
1 teaspoon cornstarch
For biscuit topping
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
3/4 stick cold unsalted butter, cut into small pieces
1/4 cup boiling water
Cook peaches:
Preheat oven to 425°F.
Toss peaches with sugar, lemon juice, and cornstarch in a 2-qt. nonreactive baking dish and bake in middle of oven 10 minutes.
Make topping while peaches bake:
Stir together flour, sugar, baking powder, and salt. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Stir in water until just combined.
Remove peaches from oven and drop spoonfuls of topping over them. Bake in middle of oven until topping is golden, about 25 minutes. (Topping will spread as it bakes.)
Serves 4.
