My Husband and I are newlyweds, and he doesn't like ANY kind of pie! He and I are going to my family's Thanksgiving at my Great-Grandfathers house. I have already agreed to make two pumpkin pies and a pecan pie, but I would also like to make some kind of dessert that my husband will enjoy too.

Also, it has to be pretty simple, as I will already be pretty busy baking pies tomorrow, and don't want to stress myself out.

Thanks for all your answers! Happy Thanksgiving!

You can always go with a quick apple crisp. Chop 8-10 apples and mix with 1 cup of sugar, 1 tablespoon of flour, and a dash of cinnamon. Top with a mixture of 1 cup oats, 1 cup flour, 1 cup brown sugar, and 1/2 cup butter. Bake at 350 for 45 minutes. For an extra fall boost, you can add a cup of cranberries or frozen blueberries to the apples. You can make the whole thing a day ahead if you want and refrigerate it until you are ready to bake it. It also keeps well after you bake, and is great warm or cold.
I also have a recipe for a really easy pumpkin cake. http://allrecipes.com/Recipe/No-Fuss-Pumpkin-Cake/Detail.aspx To make it even easier, buy a can of cream cheese frosting so you don't have to bother mixing the icing and cream cheese together.

K, I have one that is in the form of a pie but really is just pudding so I think it could work.

Basically all you need is chocolate pudding mix, cool whip, and one of those gram cracker pie things.

Make the pudding, put half in the bottom of the grahm cracker crust thing, then mix the rest with half of your cool whip (so its light brown). Put that ontop of the chocolate layer, then put the rest of the cool whip on top. So youll have a three layer pudding with yummy grahm cracker bottom. It only takes like 5-10 minutes. Use the instant pudding mix.

Hope that this counts as a non-pie :)

Whenever I make it it's the first thing to go at the holidays so it should be a winner!

I had this problem because I have to make two desserts, and I was only willing to make one pie because they are not my forte. And it was insisted upon that it be a Thanksgiving-y type of dessert, so I decided on apple crisp. Super simple and delicious with a scoop of vanilla ice cream.

Recipe that I'm using that is very similar to the one that my mom used to make (but I'm cutting back on the nutmeg because 3/4 of a tsp is a lot...probably will only use 1/4): http://bettycrocker.com/recipes/recipe.aspx?RecipeId=35368

Pumpkin or Cranberry breads/cakes/bars, or even a fresh Apple cake might be an option for you, and they are pretty simple.

I like this cranberry cake recipe:

Cranberry-Orange Zest Pound Cake

1 1/4 cups unsalted butter, at room temperature
8 ounces cream cheese, at room temperature
2 cups sugar
6 eggs
1/2 tsp. vanilla
2 oranges, grated zest only
4 cups all-purpose flour
2 tsps. baking powder
Pinch of ground cloves
Pinch of salt
2 1/4 cups fresh cranberries, chopped
Powdered sugar for garnish

Preheat oven to 350 degrees.

In a mixing bowl, using a paddle attachment on medium speed, cream together butter, cream cheese and sugar until very light and fluffy.

Using low speed, mix in eggs, one at a time, and vanilla extract and orange zest, scraping the side of the bowl between each addition.

Stir together flour, baking powder, cloves and salt. Add to batter and mix on low speed until smooth. Do not overbeat. Fold in cranberries.

Pour into non-stick or prepared (greased and floured) 8- or 9-inch Bundt pan. Bake for 50 to 55 minutes or until an inserted knife comes out clean.

Cool thoroughly at room temperature and remove from pan.

Dust top with powdered sugar.
