You need to boil them first until they are tender and the meat is almost falling off the bone. Then you can baste them w/ sauce and grill them. They will not be too tough then.

I use a smoker.
Start by cutting away any exess fat. Then cut the ribes into sections. I usually just cut each full rack into half for easy handling. Boil the ribs about ten minutes in salted water.
My smoker is charcoal fired because the finishedproduct tastes better but some people use gas because it's easier. Start the fire and heat the barbecue to about 200 degrees. add smoking wood (I like hickory for ribs) and put the ribs on the rack in a single layer, meat side up. Baby back ribs need about 4 hours, whole pork ribs require 6-7 hours. Add more smoking wood and/or charcoal as needed to maintain temperature and constant smoke. In the last half hour apply an even layer of barbecue sauce of your choice. I make my own sauces but bullseye is pretty good too. If you prefer a sweet flavor use honey mustard.
When you cut the ribs turn them meat side down as its easier to cut them.

The best way to cook ribs is on the grill but put your special rub on there at night and let it marrinate then put it on the grill the next day but while your grillin put your be\abacue sauce on them while there grillin then once there done serve with your bbq sauce. They end up tough well maybe you should beat umm before you put tthem on the grill and watch them you can even not fully cook them on the grill then put them in the oven.

The secret is to cook them for a very long time in a slow oven. I never make ribs on the BBQ as they burn before they tenderize. You can put them in a pan with your favorite sauce, (I sprinkle them with chopped onions also) and bake at around 325 for at least 3 hours, depending on how many ribs you have.

You may need to cook them longer.
Try baking ribs covered in the oven until tender, then broil them on a really high temperature to get the "grilled" taste.

I've had some very tender ribs that were cooked in a crock pot on low heat all day and were covered in bbq sauce. Yummy!

I agree with rebecca......put in crock pot with a quartered onion, a lot of BBQ sauce and cook all day. The meat will fall off the bone....and very juicy, not dry at all. Not to mention, no watching them and easy clean up!
