My grandma makes this very simple, totally delicious potato salad. It's mainly for people who don't like onions and celery ana all that in their potato salad.
All you need is about 5-10lbs of potatoes, depending on how much you want, (and DO NOT use red potatoes, they do not boil well) and one cucumber for 5 lbs, 2 cucumbers for 10 lbs. Salt, pepper, Mayonnaise and Bacon.
Boil the potatoes. While the potatoes are boiling, fry the bacon. Make sure it is cooked well as it will need to be crispy. Let the potatoes cool COMPLETELY, then peel them. Cut the potatoes into squares. Then, cute the cucumber into quarters, and add to the potatoes. Then add about 1 jar of mayonnaise for 5 lbs, and about 1 1/2 jars for 10 lbs. You should be able to tell how much mayo to put in. Mix well with the potatoes and cucumber. Add Salt, Pepper, and Bacon, and mix well. Add salt and pepper to taste.

My friend makes this really yummy potatoe salad. It's potatoes, kidney beans, pickles, mayo and some dill (or no dill if you dont like it). So you would boil the potates, chop them into chunks, let them cool. Then mix in kidney beans, chopped up pickles (the little sweet ones work well) and mayo. Throw in some dill if you like.
Some people put eggs in there potatoe salad too.

Just chop up some onions, bell pepper, colour of your choir lay aside....... chop up the potatoes in cubes......boil it maybe for 5 min or less not too soft....when cook run through cool water......then put all ingredients in, season to taste add a little sugar , salt, pepper, mayonnaise, evaporated milk, if you like put some hard boil eggs in and mix well.

every body loves my potatoe salad
boil potatoes with skins until tender dont overcook stick a slender knife in them to make sure they are done & place them in frig 3-4 hour or until they get cold dont chop up til they get cool
in the meantime chop 1/2 cup sweet onion
1/2 cup sweet pickles---1/2 tbls salt or to taste--1 teasp pepper or to taste
4 boiled eggs chopped
2 sticks of celery or tablespoon of celery seed
i small jar of drain pemineto pepper
1/2 green bell pepper chopped
2 tbls mustard
1/2 cup (+ - ) Hellmans mayonaise mix all these ingredients with your chopped up potatoes with skin on sprinkle som parakia for a garnish on top

PUT IN SERVING DISH AND SPRINKLE WITH PAPRIKA. MAKE SURE YOU KEEP REFRIGERATED WILL KEEP WELL FOR 5-6 DAYS. YOU WILL LOVE THIS EASY TO MAKE POTATO SALD. I CAN EAT IT FOR BREAKFAST!
