One batch Sweet Pastry Dough, for a 1-crust pie
Filling
1 cup dark corn syrup
3/4 cup sugar
6 tablespoons butter
3 large eggs
Pinch salt
2 tablespoons Bourbon
2 cups pecan halves or pieces, or a combination
Prepare and chill the dough.
For the filling, combine corn syrup and sugar in saucepan and stir to mix. Place over low heat and bring to a boil, without stirring. Remove from heat, add butter and allow butter to melt. In a mixing bowl, whisk eggs to break up and whisk in salt and Bourbon. Whisk in syrup and butter mixture, being careful not to over mix. Allow to cool while preparing bottom crust.
Preheat oven to 350 degrees and set a rack in the lowest level. For the bottom crust, lightly flour the work surface and the dough and roll it to a 12-inch disk. Fold the dough in half and place it in the pan; unfold the dough and press it firmly into the pan. Trim away all but 1/2-inch excess dough at edge of pan. Fold dough under and flute edge.
Arrange pecans in crust. Skim foam from top of filling (or the top will have an unattractively mottled surface) and pour over pecans. With the back of a fork, press the pecans down into the filling so that they are immersed.
Bake the pie for about 45 minutes, until the crust is baked through and the filling is set and well puffed in the center. Cool the pie on a rack and serve warm or at room temperature.
It is so delicous and has been in the family a long long time.

Pecan Pie
"Unlike most pecan pies, this one does not require corn syrup."
Original recipe yield: 1 - 9 inch pie.
INGREDIENTS:
1 cup light brown sugar
1/4 cup white sugar
1/2 cup butter
2 eggs
1 tablespoon all-purpose flour
1 tablespoon milk
1 teaspoon vanilla extract
1 cup chopped pecans
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, vanilla and nuts.
Pour into an unbaked 9-in pie shell. Bake in preheated oven for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for 30 to 40 minutes, or until done.

1/2 teaspoon of salt
1 or 2 cups of pecans
Mix all together the sugar, white syrup, eggs, cornstarch, butter, vanilla, and the salt in a large bowl. Then add the pecans! Pour into an unbake pie shell. Heat oven to 350 and bake pie for 45 minutes or until it sets in the middle.

Follow the recipe on the back of the Karo syrup bottle. Just remember to use real butter and real vanilla, not margarine or imitation vanilla. Do not over cook or pecans will be hard to chew.

OMg I just got done making two and they were super easy- I made a Maple Pecan Crunch pie and a Pecan pie heres the recipes. Good luck
Rich Pecan Pie
Prep Time: 15 min
Total Time: 55 min
Makes: 8
1 cup maple-flavored or pancake syrup
1/2 cup sugar
1/4 cup (1/2 stick) butter or margarine
1-1/2 cups PLANTERS Pecan Halves
1 unbaked 9-inch pastry shell
3 eggs
1 tsp. vanilla
Dash of salt
PLACE syrup, sugar and butter in medium saucepan. Bring to boil on medium heat. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally. Cool slightly.
PREHEAT oven to 375°F. Place pecans in pastry shell. Beat eggs with vanilla and salt in medium bowl with wire whisk until well blended. Gradually add cooled syrup mixture, beating until well blended. Pour over pecans in pastry shell.
BAKE 35 to 40 minutes or until knife inserted in center comes out clean. Cool on wire rack.
Crunchy Maple-Pecan Pie
Prep Time: 10 min
Total Time: 1 hr 10 min
Makes: 8 servings
1-1/2 cups maple-flavored or pancake syrup

OLD-FASHIONED PECAN PIE
For crust
1 1/3 cups all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/3 cup chilled solid vegetable shortening, cut into small pieces
1/4 cup (1/2 stick) chilled unsalted butter, cut into small pieces
2 tablespoons (about) ice water
For filling
1 cup sugar
3 large eggs
1/2 cup light corn syrup
3 tablespoons unsalted butter, melted
2 teaspoons vanilla extract
1 3/4 cups chopped pecans
Make crust:
Mix first 3 ingredients in processor. Add shortening and butter; cut in using on/off turns until mixture resembles coarse meal. Blend in enough water to form moist clumps. Gather into ball; flatten into disk. Wrap in plastic; chill 1 hour.
Roll dough on floured work surface to 13-inch round. Transfer to 9-inch round cake pan with 1 1/2-inch-high sides. Trim to align with pan edges. Freeze 15 minutes.
Make filling:
Preheat oven to 350°F. Whisk first 5 ingredients in medium bowl to blend. Mix in 3/4 cup pecans. Pour into crust. Sprinkle with 1 cup pecans. Bake pie until set, about 1 hour 15 minutes. Transfer to rack; cool.
Serves 8.

Yep, I use the Karo Syrup label recipe myself! Add 1 level Tbsp. of cornmeal to the batter to cut some of the sweetness and give the jelly part more texture.
