I am making pies early- 2 pecean pies and I wanted to know should i just cover them and leave them out or should i put them in the fridge? Will they stay good for Thanksgiving?

You need to refrigerate them, you can always heat them back up in the oven on Thanksgiving. You would just need to cover your crust with foil so it doesn't get burned....I do this every year...you don't want to leave them out.

i bought frozen pies for that same reason. i would have to make it early because i would have no time tommorow and thur i don't want to rush it. i would say to refridgerate it today and it should still be good for thur. it takes about 3 days of unrefridegerated pies to go bad. so maybe if its in there for two days it should be fine.

They should be kept in the refrigerator until about a 1/2 hour before serving so that they can reach room temperature. All baked goods stay fresher in the fridge is your not serving them for a few days.

I'd freeze them, just to be sure. Pull them out on TG AM and let thaw on the counter.
