The skin on red potatoes is very thin so you don't have to peel them before you boil them. If you don't want the skins on them then take them off after cooking, they come off quite easily then. I like the red skin in my mashed potatoes. It's a matter of taste!

I don't. I love the red skins in mashed potatoes, but I'm sure some people don't like them. They are actually the most nutritious part of the potato in any case.

You can make mash with the skins still on (or off) out of any type of potato. It's a matter of taste!

They are actually very good if left on.....a local restaurant makes "smashed potatoes" with them. They are boiled in chicken broth which gives it great flavor. Don't drain it all out...add butter and some seasoned salt and pepper. mash them and if needed add a little milk at a time till you reach desired consistancy.

Happy Thanksgiving !!!!

Red potatoes you don't have to peel, it actually tastes much better if you don't. I peel all other kinds.

It isn't necessary to peel them if they are very young, with thin skins.
Just scrub them well before cooking.

You can choose to cook them either way. They will look more "rustic" if you leave the skins on. Also, htere are a lot of vitamins in the skins as well.
